The Sushi Chef position at Food City plays a critical role in the company’s in-store fresh sushi program, designed to deliver high-quality sushi products directly to customers. This position is unique because the sushi is prepared in full view of customers, requiring the chef to maintain an organized, clean workspace while engaging actively with guests. The chef is responsible not only for sushi preparation but also for customer interaction, helping to answer questions, provide samples, and create a welcoming atmosphere.
This role requires a blend of culinary skill, food safety competence, and strong customer service abilities. The sushi chef will prepare finfish, shellfish, and fresh produce, maintain stringent food safety records, and ensure all sushi products meet the highest quality standards. Additionally, the chef will assemble and package sushi and related products, offer custom sushi rolls upon request, and support inventory and supply ordering to keep the sushi program running smoothly. The position demands a proactive approach to training new associates, maintaining compliance with all relevant food safety laws, and actively marketing the sushi program through customer interaction and regular sampling schedules.

Job Requirements
- Must be 18 years of age or older
- Ability to meet standard physical, mental, and visual demands
- Ability to understand and follow verbal and/or written instructions
- Ability to perform routine and repetitive tasks
- Ability to have constant contact and interaction with various levels of individuals
- Ability to adhere to company time and attendance policies by attending on-site work during scheduled shifts

Job Duties
- Acknowledge, greet, and engage all guests
- Prepare various finfish, shellfish, and fresh produce items to be used in the sushi
- Prepare, test, and maintain food safety records for sushi rice
- Assemble, package, and label various forms of sushi, sides, and spring rolls for sale to the customer
- Assemble custom sushi rolls at the request of the customer
- Train and assist other associates as needed
- Comply with all Food City policies and Food Safety Standards
- Maintain highest standards in product quality
- Monitor temperatures and shelf lives of all ingredients and retail packages
- Keep workstation and area neat and clean at all times
- Demonstrate complete knowledge of sushi menu and all ingredients
- Actively market Food City Sushi Program through regular sampling
- Assist in ordering supplies to maintain minimum inventory
- Assist with maintaining proper signage
- Communicate customer comments and requests to Meat Department Manager
- Perform other duties as assigned
