Job Description
American Cruise Lines is the premier cruise line operating exclusively within the United States, renowned for delivering an intimate and high-quality small-ship experience along America’s most scenic rivers. Specializing in riverboats and iconic paddlewheelers that accommodate no more than 200 guests, American Cruise Lines offers unique voyages that immerse travelers in the rich cultural and natural heritage of the United States. The company continues to expand its fleet with new state-of-the-art vessels, further enhancing its commitment to providing exceptional cruise vacations. This growth opens exciting opportunities for culinary professionals looking to contribute to an industry-leading team dedicated to delivering top-tier dining experiences on board.
The role of Lead Sous Chef at American Cruise Lines for the 2026 season is a pivotal position within the culinary department. This full-time, exempt position requires a seasoned culinary expert who can uphold the company’s high standards for exceptional cuisine while delivering a warm, hospitable dining experience for both guests and crew. The Lead Sous Chef works closely with the Executive Chef to develop and execute diverse menus inspired by fresh and locally sourced ingredients, emphasizing regional specialties from the areas the ships traverse. Every day, the lead sous chef is responsible for preparing a variety of memorable dishes for breakfast, lunch, and dinner services, including buffets for the crew, ensuring their meals are nutritious, well-balanced, and cater to various dietary restrictions and allergies.
In this role, the Lead Sous Chef will oversee all kitchen operations to maintain efficiency, quality, and hygiene excellence, ensuring compliance with strict food safety and sanitation standards. The dynamic and fast-paced rhythm onboard demands strong multitasking capabilities, rigorous organization, and the ability to lead and inspire culinary team members under pressure. The position also requires consistent evaluation of crew meal satisfaction and the ability to adapt quickly to the unique challenges of working on a moving vessel. This job necessitates a profound sense of optimism, commitment, patriotism, and merit, reflecting American Cruise Lines’ core values and mission to Share America’s Story on the Finest American Ships. Candidates must be prepared for an onboard work schedule of approximately 7 days per week during 6 to 8 week rotations, followed by 1 to 2 weeks off, living and working aboard the vessel in a closely-knit team environment.
American Cruise Lines offers competitive daily compensation, health benefits including dental and vision insurance, a 401(k) plan with company match, and covered expenses such as travel, room, board, uniforms, and professional training. This role provides a remarkable opportunity for culinary talent to grow their career within a respected American cruise line that values tradition, innovation, and exceptional service.
