The Lead Sous Chef position at American Cruise Lines is a pivotal role within the culinary team for the 2026 season. This is a full-time, exempt position that requires living and working onboard the vessel for extended periods, typically involving a schedule of 6 to 8 weeks onboard followed by 1 to 2 weeks off. As Lead Sous Chef, you will collaborate closely with the Executive Chef to develop diverse, regionally inspired menus made with fresh ingredients, catering to both guests and crew. Given that crew members rely entirely on onboard meals, the role demands careful attention to accommodating various food allergies and dietary restrictions by preparing well-balanced, nutritious, and diverse buffet-style meals.
In this role, you will oversee all aspects of food production across breakfast, lunch, and dinner services, ensuring high-quality dishes that delight and satisfy a varied clientele. Maintaining order, hygiene, and food safety protocols in the galley is essential to safeguard the health of both guests and crew. This position demands strong leadership, multitasking capabilities, and the ability to work effectively under pressure within the unique setting of a moving riverboat. The ideal candidate will have at least five years of culinary experience in full-service resorts, hotels, or cruise ships, possess ServSafe Manager Certification (strongly preferred), and hold a Transportation Worker Identification Credential (TWIC). Other essential skills include excellent oral communication, interpersonal abilities, and proficiency in reading and understanding cooking recipes.

Job Requirements
- Must have culinary experience of at least 5 years in full-service resorts, hotels, or cruise ships
- ServSafe Manager Certification is strongly preferred
- Valid Transportation Worker Identification Credential (TWIC) required
- Pass a US Coast Guard regulated pre-employment drug test
- Ability to work approximately 12 hours per day
- Capable of standing for entire shifts
- Frequent lifting of up to 20 lbs and occasional lifting up to 50 lbs
- Able to work in an environment subject to continual motion due to ship movements
- Willingness to live and work onboard a vessel for extended periods
- Ability to navigate tight spaces during onboard emergencies
- Frequent use of stairs expected
- Must demonstrate strong multitasking, direction-taking, teamwork, and problem-solving skills
- Ability to perform essential job functions with or without accommodation
Job Qualifications
- A minimum of 5 years culinary experience in full-service resorts, hotels, or cruise ships
- ServSafe Manager Certification strongly preferred
- Transportation Worker Identification Credential (TWIC) required
- Thorough knowledge of food safety standards
- Must demonstrate strong multitasking, direction-taking, and teamwork abilities
- Ability to remain composed under pressure
- Problem-solving, self-motivation, and organizational skills are essential
