The Lead Prep Cook position at The Rally Hotel is a crucial culinary role within the hotel's bustling kitchen operations. This regular full-time role offers a competitive hourly pay of USD $24.00 and calls for a skilled individual who can organize and lead the prep kitchen operations adeptly. The Lead Prep Cook is responsible for preparing food items that meet high production and quality standards, ensuring all culinary offerings support both the hotel’s restaurant and banquet services. Leadership is at the core of this role, as it requires coordinating the prep team effectively, managing daily prep priorities, and maintaining a smooth workflow amid a fast-paced environment.

Key responsibilities include leading the prep team with clear communication, organizing detailed prep lists, monitoring food preparation processes to ensure consistency and timeliness, and fostering a positive, accountable team atmosphere. The Lead Prep Cook also trains team members, enforces kitchen policies and safety regulations, and upholds rigorous food quality standards ranging from taste and presentation to portion control. This individual supports both restaurant and banquet production by assisting with food preparation and overseeing banquet operations to meet event requirements accurately.

The role necessitates strict adherence to sanitation, nutrition, and safety standards alongside upkeep of the kitchen workstations and equipment. The Lead Prep Cook monitors inventory usage, manages perishable storage correctly, and promptly reports any issues related to food quality or shortages to the chef on duty. Job Requirements

  • High school education or equivalent experience
  • Previous prep cook experience in a high-volume kitchen
  • Ability to lift up to 70 lbs regularly
  • Ability to stand for extended periods
  • Capacity to follow verbal and written instructions
  • Ability to work in environments ranging from -10 degrees to over 100 degrees
  • Good hearing and communication skills
  • Physical mobility to travel 30-50 feet regularly

Job Qualifications

  • High school education or equivalent experience
  • Previous prep cook experience in a high-volume kitchen required
  • Hotel or banquet experience preferred
  • Demonstrated leadership or team lead experience strongly preferred
  • Strong organizational skills with the ability to manage multiple priorities
  • Solid understanding of food safety, sanitation, and kitchen operations
  • Ability to work efficiently in a fast-paced, team-oriented environment

Job Duties

  • Lead and support the prep team by clearly communicating daily priorities and expectations
  • Create, organize, and distribute detailed daily prep lists for both restaurant and banquet operations
  • Monitor execution of prep lists throughout the shift, ensuring efficiency, consistency, and timeliness
  • Maintain a positive and professional approach with coworkers while fostering accountability and teamwork
  • Train and guide team members on proper techniques, recipes, and kitchen procedures
  • Follow and reinforce all kitchen rules, policies, and procedures
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using broilers, ovens, grills, fryers, and other kitchen equipment
