At Ojo Santa Fe Spa Resort, the Lead Line Cook position plays a critical role in upholding the quality and standards that define the guest experience. Situated in the Blue Heron kitchen, the Lead Line Cook leads shift operations by coordinating food and beverage back-of-house (BOH) team members and collaborating seamlessly with front-of-house (FOH) colleagues as well as other departments within the resort. This role encompasses a full spectrum of culinary responsibilities, from bulk preparation and line service to maintaining cleanliness and food safety.
The Lead Line Cook ensures that every dish is prepared with excellence and consistency while managing kitchen operations that support banquet and special event catering. As a leader, this individual models and promotes the company's core values, provides clear guidance and training, and ensures the kitchen environment is safe and supportive. Accountability and leadership are key, with a focus on fostering team development and upholding food safety standards according to federal, state, and local regulations.

Job Requirements
- Advanced understanding of food preparation for both a la carte restaurant service and catered banquet services
- knife skills advanced to the point of being able to instruct other team members in both capability and safety
- a sense of urgency in fulfilling guest needs, tempered by the mindfulness necessary to provide a guest experience meeting standards of quality and excellence
- consistent punctuality and reliability
- demonstrated flexibility, adaptability, and willingness to assist where needed in support of the team and business needs
- ability to work in an environment with frequent exposure to heat, steam, and noise
- ability to stand for extended periods up to eight or more hours, and to sit, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing up to 50 pounds
- valid New Mexico Food Handler Card as required for employees handling food, utensils, or food-contact surfaces
- ability to work a flexible schedule including days, nights, weekends, and holidays
- ability to perform tasks requiring manual dexterity, auditory focus, and visual attention
- willingness to work outdoors and navigate uneven ground, diverse terrain, multiple stairs, and unpredictable weather conditions

Job Duties
- Model, promote and train our core values to the F&BBOH team
- provide clear guidance and expectations to F&BBOH team members in alignment with our mission and core values and the direction provided by the chef manager or designee
- ensure team members have the tools, resources, and support needed to meet established expectations
- maintain a safe and stable environment in the kitchen so that team members feel secure while fulfilling defined expectations
- support the training and development of all F&BBOH team members in alignment with onboarding checklists, core values kitchen training, and any direction from the chef manager or designee
- complete any tasks at any station in the kitchen as required by business needs
- coordinate preparation, timing and execution for banquets and special events
- monitor product freshness and facilitate rotation of old product based on schedule
- ensure full compliance with all food safety, sanitation, and health regulations including federal, state, local requirements and company protocols
