The open position is for a Lead Line Cook at Merrill & Houston's Steak Joint, a critical role responsible for ensuring consistency and quality in every dish served. This role requires a culinary professional who can work collaboratively within a team to create an exceptional dining experience for both members and guests. The Lead Line Cook will be at the forefront of food preparation, ensuring that every plate leaving the kitchen meets the group’s high standards. Responsibilities include overseeing kitchen stations, following precise recipes and cooking techniques, and maintaining hygiene and safety standards.

As a key team member, the Lead Line Cook will support the kitchen’s operation by opening and closing procedures, ingredient preparation, and food monitoring. Job Requirements

  • Previous experience in a non-fast food restaurant or training in a culinary school
  • ServSafe Certification or willingness to obtain certification within 90 days of employment
  • Ability to add, subtract, multiply and divide in all units of measure
  • Ability to keep up with a fast paced environment
  • Ability to work late nights, weekends and holidays
  • Must be 18 years old
  • Able to perform with minimum supervision
  • Slip resistant shoes required
  • U.S. work authorization required

Job Duties

  • Report to work on time according to posted schedule in specified uniform
  • Open and close the kitchen properly and follow the opening and closing checklist for kitchen stations
  • Assist others in closing the kitchen and check on all teammates to ensure their work is done
  • Measure and mix ingredients accurately and review any modifications to recipes to meet quality standards with Executive Chef or Kitchen Manager
  • Test food being cooked by properly taste testing and taking food temperatures using proper ServSafe procedures and guidelines
  • Perform food preparation and cooking skills including measuring, washing, peeling, cutting, grilling, baking, roasting, broiling, steaming, carving, and portioning foods
  • Monitor food quantities, quality and display during preparation
  • Stock work-station appropriately for each shift to be ready for the meal period
  • Develop and have knowledge of restaurant's menu, including what ingredients are used to prepare each dish and how to build each dish to order
  • Date all food containers and rotate as needed, making sure that all perishables are kept at proper temperatures
  • Clean work space after each shift including switching of food storage containers, labeling of ingredients, scrubbing and sanitizing of all parts of station
