The role of Lead Line Cook at Umami Riot is a critical leadership position within the kitchen team, designed for culinary professionals who aspire to more than just performing daily tasks. This position demands a passionate leader who can set the pace for the line, lead by example, and foster growth and success for the entire culinary team. The Lead Line Cook will be responsible for managing their station confidently while maintaining overall kitchen flow throughout high-volume service. This includes mentoring fellow line cooks, ensuring consistency and precision in food execution, and maintaining rigorous standards for setup, organization, and cleanliness. Critical to the role is the ability to communicate effectively with chefs and teammates, anticipate and solve problems proactively, and uphold all food safety and sanitation regulations. This hands-on position requires sustained focus, fast-paced movement, and the ability to thrive under pressure. The Lead Line Cook will also assist in prep production, inventory organization, and contribute to building a positive, accountable kitchen culture grounded in teamwork and respect. Job Requirements

  • High school diploma or equivalent
  • Previous experience as a line cook or similar role in a busy kitchen
  • Ability to lead and motivate a team
  • Physical stamina to work long shifts standing and performing kitchen tasks
  • Capability to lift up to 50 lbs
  • Willingness to work with knives, open flames, and hot equipment
  • Commitment to maintaining safety, sanitation, and cleanliness standards
  • Dependability and strong work ethic
  • Ability to communicate effectively with team members
  • Flexibility to work varied shifts in a fast-paced environment

Job Duties

  • Leading your station with confidence while helping maintain flow and execution across the kitchen
  • Coaching, supporting, and mentoring line cooks through prep, service, and daily operations
  • Executing bold, crave-worthy food with consistency, precision, and attention to detail
  • Ensuring stations are set up, stocked, organized, and service-ready before every shift
  • Maintaining quality, consistency, and presentation standards during high-volume service
  • Communicating clearly with chefs and teammates to keep service moving smoothly
  • Identifying issues before they become problems and helping the team find solutions in real time
  • Upholding food safety, sanitation, and cleanliness standards at all times
  • Assisting with prep production, inventory organization, and daily kitchen responsibilities as needed
  • Helping create a positive, accountable kitchen culture where teamwork comes first
