Olde Mecklenburg Brewery (OMB) is a cherished institution in Charlotte, North Carolina, known for blending traditional German brewing principles with a vibrant local culture. Established in 2009 in Charlotte's Lower South End, OMB is renowned for adhering strictly to the German Purity Law (Reinheitsgebot), crafting beer using only four ingredients: water, barley, hops, and yeast. The Lead Line Cook position at OMB Ballantyne is a pivotal role within the Culinary Management Team. As the line leader, this role demands not only exceptional culinary skills but also leadership qualities that help maintain high standards and foster a productive, positive kitchen environment. This full-time hourly position, offering $20-$24 per hour depending on experience, appeals to culinary professionals who take pride in clean technique, efficiency, and the ability to deliver consistent, quality dishes during busy service hours.
The successful candidate will manage the line operation, overseeing quality control, portion sizes, presentation, and adherence to recipes. They will need to ensure ticket times are met—specifically hitting a 12-minute goal—without compromising food quality or safety. Additionally, the Lead Line Cook supervises inventory management, temperature logs, and health and safety compliance, ensuring the kitchen exceeds all regulatory standards. This role requires hands-on mentoring and training of junior cooks, modeling proper cooking methods and teamwork, and maintaining calm and adaptability during high-pressure situations. Job Requirements
- Culinary degree or training in a high-volume kitchen
- Previous line cook experience
- Strong leadership and communication skills
- Solid professional cooking and knife handling skills
- Knowledge of safety, sanitation, and food handling procedures
- Strong sense of urgency and ability to stay calm under pressure
- Open mind and genuine can-do attitude
- Ability to transport up to 50 lbs

Job Duties
- Run the line operation ensuring quality, care, and craftsmanship for every dish
- Hold the line on recipes, portion control, and presentation standards
- Achieve 12-minute ticket times without cutting corners
- Conduct quality checks on ingredients and finished plates
- Monitor inventory and manage temperature logs and regulatory compliance
- Maintain a clean, safe, and hazard-free kitchen meeting all health department guidelines
- Model proper cooking techniques and knife skills for the team
