The Lead Line Cook role at Heritage Hotels & Resorts is a critical position within the culinary team, offering hands-on leadership on the kitchen line while ensuring consistent food quality, safety, and seamless service execution. This role involves coordinating and supporting the daily operations of the kitchen line, maintaining workflow efficiency, and upholding the highest culinary standards to deliver an exceptional dining experience to guests. As a Lead Line Cook, you will be responsible for coaching and mentoring line and prep cooks, monitoring inventory and food safety standards, and helping maintain a clean, organized kitchen environment that promotes professionalism and efficiency.

Job Requirements

  • High school diploma or equivalent required
  • one or more years of professional cooking experience required
  • high-volume and fine dining experience preferred
  • current New Mexico Food Handler Certification required
  • advanced knowledge of culinary techniques and line operations
  • ability to thrive in fast-paced, high-volume kitchen environments
  • ability to stand for extended periods and lift, carry, push and pull up to 30 pounds
  • flexible availability including nights, weekends and holidays

Job Qualifications

  • High school diploma or equivalent
  • one or more years of professional cooking experience
  • advanced knowledge of culinary techniques and line operations
  • prior experience in high-volume and fine dining environments preferred
  • current New Mexico Food Handler Certification
  • ability to thrive in fast-paced, high-volume kitchen environments

Job Duties

  • Lead daily line operations and support station setup, execution and breakdown
  • coordinate kitchen workflow and maintain service timing with leadership
  • ensure consistent food quality, portioning and presentation
  • coach and support line and prep cooks to maintain strong performance
  • monitor prep levels, inventory flow and food safety standards
  • maintain a clean, organized and professional kitchen environment
