The Lead Line Cook role is a pivotal position within this expansion. It is designed for a skilled culinary professional with solid experience and a fervent passion for Italian cuisine, particularly with a focus on fresh pasta production and open kitchen service. This role requires a strong technical skill set, the ability to work under pressure, and an eye for detail to ensure the highest quality and consistency in every dish.

Working in an open kitchen environment, the Lead Line Cook will be at the forefront of the guest dining experience, showcasing culinary skills and engaging with the dynamic atmosphere that defines A Pasta Bar. Responsibilities include managing a critical kitchen station focused on fresh pasta, sauces, and hot line service. The position is highly hands-on, demanding discipline, coordination, and expert execution to maintain the restaurant's high standards for timing, plating, and overall presentation.

The successful candidate will work closely with the Senior Sous Chefs and the Head Chef, contributing creatively to the development of new pasta dishes and seasonal menu innovations. Collaboration and effective communication with all kitchen stations will ensure seamless service flow and operational excellence.

Job Requirements

  • Minimum 2-3 years of experience in a professional kitchen
  • Strong experience in fresh pasta production and line cooking
  • Confident working in an open kitchen environment
  • Valid Food Handler Certificate
  • Ability to stay organized and clean under pressure
  • Knowledge of portion control and waste management
  • Strong communication skills
  • Passion for Italian cuisine

Job Duties

  • Run the pasta / line section with full responsibility during service
  • Execute fresh pasta dishes, sauces, and garnishes with precision and consistency
  • Maintain high standards in plating, timing, and execution
  • Prepare and organize mise en place for daily service
  • Ensure strict FIFO, proper storage, labeling, and waste control
  • Maintain sanitation standards in compliance with Florida Department of Health regulations
  • Work efficiently under pressure in a high-volume open kitchen environment
  • Collaborate with all kitchen stations to ensure smooth service flow
  • Support Senior Sous Chefs in the development of new pasta-focused dishes
  • Maintain full ownership of the station with discipline and attention to detail
