The role of Line Cook at Vic's River Grill is an opportunity for culinary professionals who are passionate about preparing high-quality food and ensuring that customers receive a memorable dining experience. This position reports directly to the Sous Chef and Restaurant Manager, positioning the Line Cook as a crucial team member responsible for cooking, plating, and garnishing of various hot menu items including meats, fish, vegetables, and soups. The Line Cook is involved not only in the cooking process but also in the preparation and portioning of food products before cooking, ensuring all dishes meet the restaurant's quality standards and presentation guidelines.
In this role, the Line Cook will be expected to work according to recipes or personal judgment developed through experience, using various kitchen utensils and equipment such as ovens, broilers, grills, fryers, and more. Duties also include food storage and stock rotation to guarantee freshness, cleanliness and sanitation in food preparation areas, and adherence to standard portion sizes. The Line Cook supports smooth service periods by maintaining appropriate levels of food products and helping in coordination with other kitchen staff. The restaurant values flexibility, so the Line Cook must be able to assist other cooks during peak times or emergencies and participate actively in kitchen closing duties and employee meetings.
Additional responsibilities may include consulting on menu planning with supervisory staff, keeping records, coordinating kitchen staff, and performing butchery and other food preparation tasks as needed. The use of various kitchen tools and technologies such as blenders, grinders, ovens, and POS software is required. Job Requirements
- High school diploma or equivalent
- Proven experience as a line cook or in a related culinary position
- Ability to work in a fast-paced environment
- Knowledge of food safety standards and sanitation
- Effective communication skills
- Capability to follow detailed instructions and recipes
- Ability to stand for extended periods and lift moderate weight
- Willingness to work flexible schedules including weekends and holidays
Job Qualifications
- High school diploma or equivalent
- Previous experience as a line cook or similar kitchen role
- Knowledge of safe food handling and sanitation practices

Job Duties
- Promote work and act in a manner consistent with the mission of the restaurant
- Show up to scheduled shifts on time and in proper uniform
- Inspect clean and maintain food preparation and serving areas to ensure safe and sanitary food handling
- Ensure food is stored and cooked at correct temperatures by regulating kitchen equipment
- Ensure freshness of food and ingredients by checking quality and rotating stock
- Comply with standard portion sizes cooking methods and kitchen policies
- Stock and maintain sufficient levels of food products at line stations
- Handle store and rotate all food products and supplies according to policies
- Turn or stir foods to ensure even cooking
- Season and cook food according to recipes or experience
- Bake roast broil and steam meats fish vegetables and other foods
- Weigh measure and mix ingredients according to recipes
- Portion arrange and garnish food and serve to servers or guests
- Observe and test foods for sufficient cooking using temping smelling or piercing
- Follow proper plate presentation and garnish setup for dishes
- Wash peel cut and seed fruits and vegetables
- Carve and trim meats for hot or cold service or sandwiches
- Assist in food prep assignments during off-peak periods
- Substitute for or assist other cooks during emergencies or rush periods
- Close the kitchen following the closing checklist
- Attend all scheduled employee meetings and offer suggestions for improvement
- Coordinate with and assist fellow employees to meet guests needs
- Fill in for fellow employees where needed to ensure guest service and operations
- Complete reasonable tasks assigned by supervisor or manager
- Consult with supervisory staff to plan menus considering costs and special needs
- Keep records and accounts
- Coordinate supervise work of kitchen staff
- Prepare relishes and hors d'oeuvres
- Estimate food consumption requisition or purchase supplies
- Butcher and dress animals fowl or shellfish or cut and bone meat prior to cooking
