The role of Lead Cook at Harmony is pivotal in the successful operation of the dining services kitchen. This position requires a motivated and skilled culinary professional who can prepare meals strictly according to approved menus and recipes, while paying close attention to the special dietary requirements of senior residents. The Lead Cook is also a key member of the kitchen leadership team, assisting the Dining Services Director (DSD) in training and supervising dietary staff. In the absence of the Dining Services Director and Dining Services Supervisor, the Lead Cook assumes full supervisory responsibility to ensure efficient and effective kitchen operations.
This role demands a high level of culinary expertise, leadership, and adherence to safety and sanitation standards. The Lead Cook is responsible for overseeing food preparation, monitoring portion sizes to reduce waste, and ensuring meal quality and presentation meet established standards. The position also requires diligent maintenance of the kitchen environment — including cleanliness and equipment reporting — as well as a focus on food safety practices such as temperature control and proper storage. Attention to detail is critical, as the Lead Cook must respond to changes in residents' dietary needs and preferences, ensuring that individual requests are respected and accommodated.
Interaction with residents and other staff members requires exceptional communication skills and a courteous, polite demeanor, along with strict confidentiality regarding resident information. The role also involves regular participation in required in-service training and staff meetings to stay current on operational procedures and culinary standards. Job Requirements
- High School Diploma or GED
- experience as a cook preferably in senior living for fine dining
- leadership experience
- Serv-Safe certified or willing to complete certification within 60 days of hire
- basic understanding of food service operations including familiarity with other dietary position duties
- ability to read write and make simple calculations
- able to learn quickly and apply principles learned
- able to follow oral and written directions
- experienced in food preparation cooking and estimating quantities of food required
- knowledgeable of sanitation and safety principles in handling food and equipment
- able to stand for long periods and withstand temperature extremes wet or humid conditions and noise
- able to lift 50 lbs regularly or at least eight times per shift
- able to carry heavy objects for 20 feet
- able to pull push grasp and reach adequately for cooking activities
- organized and works well with people as part of a team
- maintains designated uniform including slip resistant footwear and good personal hygiene
- willing to work flexible schedule including evenings weekends and holidays

Job Duties
- Prepare and present menu items according to standard recipes
- assist DSD with training and supervision of dietary staff
- maintain a clean and orderly work area at all times including floors
- participate in weekly cleaning routines planned by Dining Services Director
- report faulty equipment broken or chipped tableware and food trays to supervisor and remove these items from meal service
- report incorrect refrigerator and freezer temperatures to supervisor immediately and record two times per day
- ensure all leftover food is properly cooled stored identified and dated
- observe good safety practices
- monitor and control portion sizes to minimize food waste
- remove frozen food items from freezer for next day or meal preparation and begin preparation for next day meal
- make appropriate menu substitutions with approval of Dining Services Director
- supervise all assigned duties to ensure kitchen is ready to provide meal service
- when working evening shift ensure kitchen area is clean and ready for next day operation
- take and record food temperatures three times daily
- attend required in-service and staff meetings
- familiarize with specific requests and diets of each resident
- be alert for changes in residents dietary needs likes and dislikes
- be courteous and polite to all residents visitors and staff
- follow confidentiality policies regarding resident information
- supervise dietary staff in absence of Dining Services Director and Supervisor
- assist in training new dietary employees
- conduct in-services and training at direction of Dining Services Director
- attend all required in-services and staff meetings
