The role of Lead Cook at this community is a vital position responsible for the preparation and presentation of meals that adhere strictly to approved menus and recipes. More than just a cook, the Lead Cook plays a supervisory and training role, assisting the Dining Services Director and Dining Services Supervisor in managing dietary staff to maintain the highest standards of kitchen efficiency and food quality. This includes overseeing food safety measures, maintaining cleanliness in the kitchen, and ensuring all operational protocols are followed. The Lead Cook is expected to demonstrate leadership skills by stepping in to supervise the kitchen in the absence of higher leadership, ensuring uninterrupted meal service.

Candidates for the Lead Cook position must be experienced in food preparation and cooking, preferably with backgrounds in senior living or fine dining environments. A strong knowledge of sanitation, safety standards, and portion control is essential to minimize waste and maintain consistency in meal quality. The Lead Cook must also possess excellent organizational skills and the ability to work well within a team, as well as independently when required. This role demands physical stamina, including the ability to stand for extended periods and handle physically demanding tasks such as lifting and carrying heavy items.

The Lead Cook is responsible for monitoring food temperatures, managing leftover food properly, and ensuring the kitchen is well-stocked and ready for each service. Attention to detail, such as reporting broken equipment or incorrect temperatures, and sensitivity to residents' dietary needs and preferences are critical aspects of this job. The position requires the individual to be courteous and professional with residents, visitors, and colleagues alike, maintaining confidentiality and supporting a respectful dining environment.

Training new dietary staff and conducting in-service training sessions are additional important duties, contributing to the ongoing development of the team. The position offers a flexible schedule, including evenings, weekends, and holidays, and requires adherence to a professional dress code, including slip-resistant footwear. Job Requirements

  • Must have a high school diploma or GED
  • must have experience as a cook preferably in senior living for fine dining
  • must have leadership experience
  • must be Serv-Safe certified or willing to complete certification within 60 days of hire
  • must have a basic understanding of food service operations including familiarity with other dietary position duties
  • must possess the ability to read, write, and make simple calculations
  • must be able to learn quickly and apply principles learned
  • must be able to follow oral and written directions
  • must be experienced in food preparation, cooking and in estimating quantities of food required
  • knowledgeable of principles and requirements of sanitation and safety in handling food and equipment
  • must be able to stand for long periods of time and withstand temperature extremes, wet and/or humid conditions and noise
  • must be able to lift 50 lbs on a regular basis or at least eight times per shift
  • must be able to carry heavy objects for 20 feet
  • must be able to pull, push, grasp, and reach adequately to perform necessary cooking activities
  • must be organized and work well with people as part of a team
  • must be in designated uniform including slip-resistant footwear during working hours and maintain good personal hygiene
  • must be willing to work a flexible schedule that includes evenings, weekends, and holidays

Job Qualifications

Job Duties

  • Prepare and present menu items according to standard recipes
  • assist Dining Services Director with training and supervision of dietary staff
  • maintain a clean and orderly work area including floors
  • participate in weekly cleaning routines planned by Dining Services Director
  • report faulty equipment and broken or chipped tableware and food trays to supervisor and remove these items from meal service
  • report incorrect refrigerator and freezer temperatures to supervisor and record these twice daily
  • ensure all leftover food is properly cooled, stored, identified and dated
  • observe good safety practices
  • monitor and control portion sizes to minimize food waste
  • remove frozen food items from freezer for next day meal preparation and begin preparation
  • make appropriate menu substitutions with approval of Dining Services Director when food items are unavailable
  • supervise assigned duties to ensure kitchen readiness for meal service
  • ensure kitchen area is clean and ready for next day operation when working evening shift
  • take and record food temperatures three times daily
  • attend required in-service and staff meetings
  • become familiar with the specific requests and diets of each resident and be alert for changes
  • maintain courteous and polite interactions with residents, visitors, and staff
  • follow confidentiality policies regarding resident information
  • supervise dietary staff in the absence of Dining Services Director and Supervisor
  • assist in training new dietary employees
  • conduct in-services and training as directed
  • attend all required in-services and staff meetings
