The role of Lead Baker at Paris Baguette Reno is a highly responsible, hands-on leadership position that serves as the heartbeat of back-of-house operations. The Lead Baker oversees daily baking production, including breads, pastries, donuts, and other specialty items that customers expect to meet the highest standards of quality, consistency, and care. This role requires a blend of creative craftsmanship and operational leadership, guaranteeing that all baked goods are prepared with precision following established recipes and production methods.
As the Lead Baker, you will guide a team of bakers with calm confidence, managing workflow, scheduling, and quality control to keep pace with café demand and changing sales trends. You will be responsible for maintaining organized, food-safe workstations and coordinating with cafe management to balance food costs and labor expenses. You will also play a critical role in training and onboarding new bakers, fostering a positive team-first atmosphere where collaboration and shared success are priorities.
This position involves adapting production schedules daily, managing inventory, handling ingredient stocking, and ensuring all items are created fresh with meticulous attention to detail—from preparing creams, fillings, icings, and toppings, to managing waste logs and prep reports. The Lead Baker also supports café operations when needed, helping to create a seamless and joyful experience for both guests and team members.
Ideal candidates will bring a minimum of three years of baking experience—preferably within high-volume settings—along with previous leadership or shift management experience. Strong knowledge of food safety protocols, preparation procedures, and recipe adherence is essential. Job Requirements
- Minimum 3 years baking experience
- previous leadership or shift lead experience preferred
- strong knowledge of food safety and recipes
- ability to stand long shifts and lift up to 30 lbs
- ServSafe Certification or willingness to obtain
- strong communication skills
