Job Requirements

  • Must obtain and maintain a current food handler’s card
  • must possess a valid ServSafe certification
  • may be required to obtain and maintain a gaming license
  • ability to work evening, weekend and holiday shifts
  • strength to lift up to 40 pounds occasionally
  • must be able to work in a fast-paced environment
  • must have physical ability for balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, and repetitive motions
  • must maintain neat, clean and well-groomed appearance
  • ability to travel to meetings, trade shows, and conferences

Job Qualifications

  • High school diploma or GED
  • certificate or degree in Baking and Pastry Arts preferred
  • minimum of 2 years of professional experience in high-volume or production baking
  • ability to read, write and communicate in English
  • ability to perform basic mathematical operations
  • advanced hands-on training skills
  • effective delegation skills
  • proficiency in interpreting recipes, production schedules, diagrams, and logs
  • strong communication skills
  • ability to work under pressure
  • ability to maintain high standards of quality and consistency

Job Duties

  • Oversees the preparation and production of a diverse range of baked goods, pastries, and cakes to ensure consistency and adherence to quality standards
  • assists in daily production, manages output volumes, oversees recipe execution, and maintains rigorous quality control
  • possesses strong knowledge of fundamental and advanced baking techniques
  • reviews and validates each baker’s production sheet to ensure accuracy and alignment with daily production goals
  • identifies and escalates production discrepancies
  • conducts daily inventory of essential ingredients
  • trains bakery personnel and communicates clearly with the team
  • ensures proper food storage and compliance with rotation standards including FIFO
  • upholds food safety protocols by verifying expiration dates and labeling items
  • provides support for special projects and high-profile events
  • oversees the Serrano Buffet dessert station to maintain cleanliness and professional presentation
  • reports injuries, accidents, or unsafe conditions to management
  • ensures team adherence to safety protocols
  • maintains operational records including logs, sanitation documentation, production sheets, and break schedules
  • performs additional duties to support departmental efficiency
