The Lead Baker role at San Manuel is a pivotal position within the Pastry Department, working directly under the guidance of the Assistant Pastry Chef. Job Requirements
- Must obtain and maintain a current food handler’s card
- must possess a valid ServSafe certification
- may be required to obtain and maintain a gaming license
- ability to work evening, weekend and holiday shifts

Job Qualifications
- High school diploma or GED
- certificate or degree in Baking and Pastry Arts preferred
- minimum of 2 years of professional experience in high-volume or production baking
- ability to read, write and communicate in English
- ability to perform basic mathematical operations
- advanced hands-on training skills

- proficiency in interpreting recipes, production schedules, diagrams, and logs

Job Duties
- Oversees the preparation and production of a diverse range of baked goods, pastries, and cakes to ensure consistency and adherence to quality standards
- assists in daily production, manages output volumes, oversees recipe execution, and maintains rigorous quality control
- possesses strong knowledge of fundamental and advanced baking techniques
- reviews and validates each baker’s production sheet to ensure accuracy and alignment with daily production goals
- identifies and escalates production discrepancies
- conducts daily inventory of essential ingredients
- trains bakery personnel and communicates clearly with the team
- ensures proper food storage and compliance with rotation standards including FIFO
- upholds food safety protocols by verifying expiration dates and labeling items
- provides support for special projects and high-profile events
- oversees the Serrano Buffet dessert station to maintain cleanliness and professional presentation
- reports injuries, accidents, or unsafe conditions to management
- ensures team adherence to safety protocols
- maintains operational records including logs, sanitation documentation, production sheets, and break schedules
- performs additional duties to support departmental efficiency
