The University of Tennessee Creamery is an esteemed student experiential learning retail business program operating both on and off campus. The Creamery is known for its premium ice cream products along with a variety of branded merchandise that connects strongly with the University of Tennessee (UT) community. Operated under the Department of Food Science at the Herbert College of Agriculture, the Creamery provides students with comprehensive hands-on opportunities in retail operations, food production, marketing, logistics, and customer relations. The Creamery serves as a vital interface between the university’s food science academic programs and real-world commerce, offering roles that blend theory, practice, and community engagement in one of Tennessee’s leading land grant institutions. This position plays a pivotal role in overseeing daily retail operations, catering, and bulk sales coordination across various on-campus and off-campus UT Creamery locations. It requires managing student workers effectively through recruitment, training, scheduling, and mentorship, promoting a positive and productive working environment. The role demands exceptional organizational skills, attention to detail, superior communication capabilities, and the ability to thrive in a fast-paced, dynamic retail and catering environment. The employee will be responsible for ensuring all food safety and sanitation standards are met, handling POS systems efficiently, managing finances related to retail and bulk sales operations, and driving business initiatives that align with the University’s branding and mission.
Furthermore, this role acts as a liaison between the Creamery and various internal departments and external partners, building and cultivating strong partnerships to increase in-store sales and enhance off-site bulk catering events. The employee will coordinate logistics for catering, including staffing, transport, set-up, and tear-down, while maintaining the highest level of customer service excellence. This role highlights the importance of progressive experiential learning for college students by helping them develop practical and professional skills such as public speaking, retail management, and customer engagement.
The position regularly involves data analysis to evaluate inventories, track sales, monitor budgets, and generate reports that inform strategic retail business planning and decision-making. Frequent communication and reporting to the Food Science Business Office and other university stakeholders are critical components, ensuring transparency, accountability, and alignment with broader university goals.

Job Requirements
- Bachelor’s degree
- 2+ years of experience in training and supervision
- Knowledge of store and business retail policies, systems and procedures
- Ability to train and supervise employees positively with high standards and results orientation
- Strong public relations and interpersonal skills
- Retail business skills including sales tracking, budgets, marketing and retail strategies
- Proficiency in Microsoft Office including Email, Word, Excel
Job Qualifications
- Bachelor’s degree
- 2+ years of experience in training and supervision
- Knowledge of store and business side of retail policies, systems and procedures (food service a plus)
- Strong public relations and interpersonal skills with ability to plan, organize and communicate with professionalism
- Retail business skills including tracking sales, budgets, marketing and retail strategies
- Ability to train and supervise employees in a positive and results-oriented manner
- Proficiency in Microsoft Office including Email, Word and Excel
Job Duties
- Oversee workers for daily and weekend retail operations including opening and closing, POS credit card handling, food and beverage process and policy control, sanitation and quality checks to ensure health-code compliance
- Develop sales goals and plans to meet expectations on sales and ensure university branding guidelines are followed
- Provide input to develop retail business plans, retail strategies, and consumer product development, using creative strategies to develop promotions and marketing campaigns
- Manage retail store and bulk sales finances, expenditures, inventory tracking, supply order placement, and operations to meet demand, analyze data through reports for informed decision-making, and oversee payroll budget in conjunction with the Food Science Business office
- Engage visitors and event guests about the UT Creamery brand, products and mission
- Cultivate relationships with internal and external stakeholders to grow in-store and off-site bulk sales events
- Manage bulk sales coordination through emails, phone calls, in-person communications and spreadsheet tracking
- Oversee logistics for catering events including staffing, transport, set-up and tear-down, guiding students for off-site locations
- Manage exceptional customer service for in-store and off-site bulk sales experiences
- Recruit, train, and schedule college-student teams to meet brand, university and health safety policies and processes ensuring outstanding guest service
- Coach employees in professional public speaking skills including communication, professional engagement, customer service and brand storytelling
- Develop progressive experiential learning opportunities for students to develop practical and professional skills
- Manage students rotating roles including sanitation, store prep, scooping ice cream, milkshakes, POS register, daily checklists, inventory, and bulk events
- Develop and communicate retail business initiatives and key performance indicators with action plans
- Attend project meetings representing the Creamery with internal and external partners
- Develop and deliver high-level presentations to internal and external stakeholders
- Comply, evaluate, and analyze data for efficiency and effective reporting and make recommendations
- Provide timely sales and tax information, business updates, bulk sales information, tracking and reports to Food Science and other UT stakeholders regularly
- Perform other duties as assigned
