The position is within Lesaffre's Red Star Yeast team, which plays a critical role in delivering high-quality yeast products designed to empower bakers and food manufacturers. Red Star Yeast offers a range of products that ensure consistent, flavorful, and premium-quality baked goods for consumers. Supported by the resources and expertise of both Lesaffre and Archer Daniels Midland, the Red Star team operates with modern manufacturing facilities located in Cedar Rapids, Iowa, and Dothan, Alabama. These facilities combine global industry knowledge with local reliability to meet the demands of the U.S. and Canadian markets.
This role is an exciting opportunity for a Lab Technician to join a dynamic team focused on maintaining product quality and safety through rigorous laboratory testing and analysis. Emphasizing a safety-first culture, the Lab Technician will conduct chemical, physical, and microbiological analyses of raw materials, in-process samples, and finished yeast products. The role requires working collaboratively with supervisors and operators across production, maintenance, and general services to ensure seamless laboratory operations. The Lab Technician is essential in supporting Red Star’s commitment to quality by conducting accurate tests including nitrogen, phosphorus, pH levels, sugar content, and many others, using a variety of scientific instruments and adhering to strict procedures.
Maintaining laboratory equipment, preparing chemical solutions, and consistently following safety protocols are vital responsibilities for this position. The role demands a detail-oriented professional who can efficiently manage multiple tasks while ensuring the accuracy and precision of results. This position works on a Thursday through Monday schedule from 7:00 a.m. to 3:00 p.m., offering candidates a well-defined work routine within a company that values innovation, safety, and employee well-being.

Job Requirements
- Associate degree in microbiology, chemistry, food science or related field required
- Bachelor’s degree or 2 years chemistry related lab experience preferred
- Chemistry and/or microbiology lab experience either through formal training or work experience
- Some computer knowledge is helpful, particularly the use of Microsoft Excel
- Ability to prioritize and organize tasks during the day
- May require repeat analysis if unsure or have unusual results
- Decision to repeat tests may be made independently or directed by supervisor
- Must be able to follow written procedures
- Must be organized, precise, observant, efficient, and capable of working with minimal supervision
- Ability to perform several tasks simultaneously while maintaining accurate timing and procedures for each task
- Must be detail oriented and safety minded
Job Qualifications
- Associate degree in microbiology, chemistry, food science or related field required

Job Duties
- Conducts microbiological analysis of samples and preparation of pure culture yeast for use in fermentations
- Conducts tests including nitrogen, phosphorus, pH, color, percentage of Buds, dry matters, sugar, brix, following written procedures, calculating results and recording in appropriate logbooks
- Conducts chemical and physical analysis of raw materials and yeast, both in-process and finished product
- Tests yeast for activity using Risograph
- Follows written procedures to conduct tests on various types of dough using different yeast lots or types
- Maintains equipment and general work area including cleaning and calibration of equipment, keeping records of maintenance performed, ensuring equipment is working properly, keeping work area clean and orderly
- Prepares chemical solutions for processing areas
- Ensures processing area is stocked with needed solutions
- Performs tests accurately and consistently, following procedures and performing tests in the same way each day
- Completes bi-annual proficiency tests
- Other duties as assigned
