Job Description

Seneca Gaming Corporation is a prominent entertainment company known for providing exceptional gaming and hospitality services across various locations. The corporation operates several casinos, integrating luxury amenities with high-quality dining experiences to create a premier destination for guests seeking leisure and entertainment. With a commitment to excellence, the company emphasizes cultural diversity, outstanding customer service, and operational integrity, ensuring a welcoming environment for patrons and employees alike. Seneca Gaming Corporation prides itself on maintaining superior standards through rigorous policies and procedures, focused on delivering a seamless and enjoyable experience both on the casino floor and within its various dining venues.

The Fine Dining Sous Chef-Asian position at Seneca Gaming Corporation offers a unique opportunity to join a dynamic culinary team within the Asian fine dining room. This role is pivotal in maintaining the high standards of food quality and service expected by the corporation's discerning guests. As a sous chef specializing in Asian cuisine, the successful candidate will be responsible for meticulous preparation work and cooking, ensuring that every dish meets the specialized culinary standards necessary in Asian cookery. The role requires deep culinary expertise, particularly in ethnic Asian cuisines such as Chinese, Mandarin, Vietnamese, and Thai, alongside mastery of traditional cooking techniques including wok, sushi, dim sum, and noodles. Attention to detail in presentation and plating is essential, as is the ability to inspect each outgoing plate for quality and consistency.

Working within the company’s policies and Internal Control Standards, this role demands punctuality, professionalism, and adherence to uniform and grooming standards. The sous chef will actively supervise kitchen staff, manage food production, and maintain quality by enforcing consistent portion sizes and taste standards. This leadership position also involves training kitchen personnel in both cooking techniques and safety procedures, cultivating a positive work environment through coaching, evaluation, and morale-building initiatives. Forecasting production levels based on business patterns and posting menu forecasts for all kitchen team members are part of daily responsibilities.

Moreover, the role includes essential operational duties such as scheduling staff to optimize labor hours, managing payroll records, and controlling food costs through purchasing specifications and waste management. Maintaining work cleanliness and equipment sanitation contributes to the overall safety and efficiency of kitchen operations. The sous chef must be computer literate, proficient in Microsoft Office and restaurant automated systems, and capable of communicating effectively in both English and Chinese to foster collaboration among diverse team members and deliver exceptional customer service.

This full-time role offers a starting salary of $61,336.77, with compensation subject to negotiation based on the candidate's education and relevant experience. Candidates must be 18 years or older and hold a degree from a postsecondary culinary arts training program with at least three years' experience in high-volume upscale restaurant kitchens. The position demands stamina and the ability to work under pressure in a fast-paced casino environment, where noise levels may be high and smoking permitted. Compliance with all internal trainings and company policies is mandatory, ensuring the individual contributes to Seneca Gaming Corporation's reputation for excellence in fine dining and guest satisfaction.
