Job Description
Located in the vibrant South San Jose area near Capital Expwy and Aborn, our Poke Restaurant is dedicated to delivering fresh, high-quality poke and sushi dishes to our growing community of customers. Our establishment prides itself on combining traditional techniques with contemporary flavors, ensuring a unique dining experience that keeps patrons coming back. We are currently seeking a part-time Kitchen/Sushi-Poke Chef who is enthusiastic about building and growing our business alongside us. This role requires a versatile and skilled individual who can confidently perform multiple responsibilities in a fast-paced environment. The successful candidate will have the opportunity to work closely with our kitchen team to prepare poke bowls and sushi from scratch, ensuring each dish meets our high standards of freshness and presentation. This position pays between $19 and $21 per hour plus tips, depending on experience, and includes shifts across day, evening, and morning hours. Full-time opportunities are also available for candidates interested in more hours.
The core responsibilities of this role include cutting and preparing fresh fish such as tuna, salmon, albacore, hamachi, and tako, which comprises about 50% of the workload, making sushi rolls and sashimi preparation which takes up approximately 25% of your daily tasks, as well as handling general kitchen preparation duties for the remaining 25%. The role does not involve a sushi bar setting, as all sushi preparation is done in the back kitchen. The ideal candidate must possess excellent knife skills to efficiently chop, cut, and slice vegetables and proteins while maintaining strict food sanitation standards at all times.
This position requires working well under pressure as a member of a team, maintaining a clean and organized workstation, and communicating ticket times effectively to servers to ensure smooth kitchen operations. Knowledge of the menu and its ingredients is essential, along with the ability to monitor product freshness and inspect food visually before it is sent out. Familiarity with kitchen equipment such as range, oven, fryer, and grill is necessary. The role demands adherence to proper food handling, storage, and federal, state, and local regulations to maintain a safe kitchen environment.
Candidates should have at least 6 months to 1 year of professional cooking experience in a similar role and hold or be able to obtain a Food Safety permit. Physical capabilities such as bending, stooping, walking, and lifting or pushing up to 50 pounds are required with or without reasonable accommodation. We prioritize punctuality and dependability, especially for shifts that include weekends and holidays between 10am and 9:30pm. Experience specifically in Poke or Sushi chef roles strongly preferred, along with the ability to work full 8-hour shifts while standing and moving throughout the workday.
