The role of Kitchen Supervisor at Aramark offers a unique opportunity to work in a correctional facility environment, overseeing inmate workers in food production and kitchen operations. This position is integral to ensuring that all meal and food items are prepared in strict accordance with production plans, Aramark standards, and safety regulations. With shifts from 2 AM to 10 AM and 10 AM to 2 PM, the position offers competitive pay starting at $18 per hour along with excellent benefits. The Kitchen Supervisor will be responsible for training inmate workers on proper cooking procedures, supervising meal preparation and tray assembly, and ensuring the timely, efficient delivery of meals that meet all Aramark guidelines. The role requires a commitment to safety, sanitation, and security practices, including maintaining secure storage of kitchen tools, equipment, and paying close attention to correctional facility policies.

Key responsibilities include monitoring production and temperature logs, directing inmates in the use of Aramark recipes, assisting with inventory control and food requisition orders, and adhering to HACCP policies and procedures related to food safety and handling. The Kitchen Supervisor also ensures accurate daily population counts are obtained and coordinated with staff to maintain operational efficiency. Candidates must demonstrate strong leadership, exercise sound judgment, and be comfortable working in a correctional setting with appropriate security clearances. Physical demands may include lifting, bending, pushing, pulling, and extended periods of standing or walking, and the use of personal protective equipment may be required.

Job Requirements

  • Must be over 18 years of age
  • minimum of one year of food preparation or related work experience preferred
  • previous supervisory experience preferred
  • experience interacting with inmates is a plus
  • ability to motivate and supervise inmates and/or team members in food production
  • ability to obtain food safety certification
  • ability to work independently with limited supervision
  • ability to follow safety procedures and policies
  • must qualify for and maintain correctional facility security clearance

Job Qualifications

  • Must be over 18 years of age

Job Duties

  • Adhere to and maintain preparation and production guidelines according to Aramark standards by reviewing and approving production and temperature logs
  • supervise inmates in food preparation and tray assembly
  • ensure timely, efficient meal service and all Aramark guidelines are being met
  • participate in preparation and serving of meals
  • print and distribute recipes
  • direct inmates in the use of Aramark recipes and train on proper cooking procedures
  • ensure proper portions and any special dietary requirements are fulfilled
  • obtain accurate daily population counts and review with staff
  • adhere to security policies and procedures and ensure storage areas are locked at all times
  • ensure that all kitchen tools and equipment are returned to their designated secure area and all keys are returned and secured
  • determine work procedures, prepare work schedules and sanitation schedules while ensuring that cooks, inmates and/or food service workers adhere to the assigned schedule
  • assist in conducting inventory, properly receiving, and storing food and food related items
  • requisition orders as needed for approval
  • participate in the preparation including the 5 Ps (Participation, Pulls, Production, Portion Control, and Postproduction), storage and assembly of meals and food items
  • follow the company’s Standard of Operation for food handling and storage and follow HACCP policies and procedures regarding proper food handling procedures
