The Pastry Chef role at Oliver Royale is a pivotal position focused on the art and science of dessert and pastry production. This primarily AM position involves overseeing all pastry operations from prep through service, ensuring that every dessert meets the highest standards of quality, presentation, and consistency. The successful candidate will work closely with Executive Chef Darin Hoagland to execute and elevate seasonal dessert menus, supporting daily service as well as special events such as wine dinners and holiday celebrations. Key responsibilities include leading the pastry and dessert production team, managing inventory and ingredient orders, maintaining cleanliness and food safety standards, and training staff. This role demands a creative culinary professional with strong organizational skills, attention to detail, and the ability to work independently during early morning shifts. The Pastry Chef will play a crucial role in crafting new seasonal desserts, refining plating techniques, and ensuring that all recipes and procedures are meticulously documented and followed. By delivering consistently outstanding desserts, this role helps enhance the overall guest experience and maintains Oliver Royale's status as a premier dining destination.

Job Requirements

  • High school diploma or equivalent
  • minimum of 3 years experience in pastry production or a related culinary field
  • demonstrated ability to lead pastry production in a fast-paced environment
  • proficiency with standard pastry tools and kitchen equipment
  • understanding of food safety and sanitation regulations
  • strong communication skills
  • ability to work early morning hours and weekends
  • physical ability to stand for extended periods
  • willingness to follow recipes and instructions precisely

Job Duties

  • Lead all daily pastry and dessert production for Oliver Royale
  • oversee AM prep for service ensuring all items are fresh ready and consistent
  • execute and maintain dessert menus in collaboration with Executive Chef Darin Hoagland
  • develop seasonal desserts and support menu changes and tastings
  • support special events wine dinners and holiday menus
  • ensure proper portioning plating and presentation standards are followed
  • communicate inventory needs including ordering and maintaining par levels for pastry ingredients
  • maintain cleanliness organization and food safety standards in the pastry area
  • train and support team members involved in pastry prep as needed
  • monitor waste and control costs through proper planning and execution
  • ensure all recipes and prep procedures are documented and followed
