The role of Kitchen Steward at 21c Museum Hotels is a vital position that ensures smooth and efficient kitchen operations daily. Reporting to the Steward Supervisor and Sous Chef, the Kitchen Steward is responsible for cleaning and maintaining all serving ware, glass, flatware, pots, and pans, which supports the team in delivering high-quality culinary service. Beyond washing duties, this position also involves organizing and disposing of trash and recycling and maintaining a clean, hygienic kitchen environment including floors, shelves, and equipment. The role is essential in upholding health standards and operational efficiency, which directly impacts guest satisfaction.
The Kitchen Steward is expected to arrive promptly and be prepared to work their scheduled shift, contributing to the seamless workflow of the back-of-house operations. They manage dishwashing machines, ensuring they are broken down and cleaned thoroughly, changing water and cleaning debris baskets regularly, and keeping chemicals like soap and sanitizers adequately stocked to maintain proper cleaning performance. The role also involves monitoring sanitizer test strips and ensuring that hand sinks are kept stocked with soap and towels throughout the day.
In addition to cleaning responsibilities, the Kitchen Steward organizes the back-of-house spaces, including soil tables, soaking basins, and glass rack storage areas, ensuring an orderly and efficient workspace. They handle trash and recycling removal at scheduled intervals or as needed during service, maintain cleanliness in receiving areas, and organize storage spaces for both food and beverage and non-food orders. This position requires physical stamina, including the ability to stand and walk for long periods and lift up to 50 pounds, reflecting the physically demanding nature of the role.
Candidates must demonstrate flexibility to work nights and weekends, punctuality, reliability, and strong communication abilities with proficiency in English. Job Duties
- report to work on time and ready to work scheduled shift
- break machine down properly in order to thoroughly clean all parts
- change water in machine and clean all debris baskets once an hour
- keep all chemicals full during service so machines are cleaning properly
- inform supervisors if low on soap products
- keep the wash, rinse and sanitizer tank water fresh, changing at least once an hour
- make sure there are sanitizer test strips present
- keep shelf above the sinks organized and dry
- take out trash and recycling at specified times or when needed during service
- make sure hand sinks are stocked with soap and hand towels throughout the work day
- maintain cleanliness and organization of both dish stations
- maintain an organized soil table so there is a proper landing spot for all dirty items
- keep all soaking basins clean and fresh
- store and organize back of house space daily
- store and organize non-food and beverage orders
- remove boxes from receiving area and maintain slop sink in the back of the kitchen
- maintain cleanliness and organization of glass rack storage area
- perform all opening and closing duties as outlined by supervisors
