Job Description

Raleigh Raw is a vibrant and health-conscious eatery located in the heart of Downtown Raleigh, NC, specifically at 7 W Hargett St. Known for its dedication to clean, chef-crafted cold fare, Raleigh Raw embraces a wellness-driven philosophy that resonates with customers seeking nutritious, flavorful, and energizing food options. Specializing in a diverse menu that ranges from refreshing smoothies to poke bowls and seasonal soups, Raleigh Raw combines culinary creativity with a strong emphasis on health and sustainability. This establishment prides itself on creating an atmosphere where fresh ingredients and wellness go hand in hand, making it a distinctive and sought-after culinary destination in Raleigh.

The role of Kitchen Prep / Prep Cook at Raleigh Raw offers an exciting opportunity to be an integral part of this clean-eating narrative. Unlike traditional kitchen roles focused solely on chopping vegetables or basic food prep, this position is about fueling a lifestyle and contributing to a compelling wellness story. The work environment is fast-paced yet supportive, designed for individuals who bring a positive attitude, hustle, and a commitment to maintaining the highest quality standards. The kitchen typically operates during the day, closing at 7 PM, which means that employees benefit from a schedule free of late nights unless overtime is voluntarily taken. The compensation ranges typically from $15 to $18 per hour, with most starters earning approximately $15 per hour and $1 raises awarded every 90 days based on performance and reliability.

In this role, your responsibilities will extend far beyond basic prep. You'll be crafting smoothies such as Chocolate Banana and Green blends, preparing smoothie bowls like the Khaleesi Acai and Blue Zone, assembling avocado toast on gluten-free sourdough topped with pickled onions and dill, and creating poke bowls and sushirritos with fresh ingredients. Cold prep also involves chopping, peeling, and slicing fresh vegetables and toppings as well as preparing seasonal soups including Tomato Basil Bisque and Coconut Corn Chowder. This role demands an eye for detail, adept knife skills, and the ability to follow detailed prep and stock checklists meticulously. It also includes making housemade almond and coconut milks from scratch, supporting the dishout during busy periods by plating and finishing dishes, and maintaining rigorous cleanliness standards to ensure a pristine kitchen environment.

Ideal candidates will possess at least one to two years of experience in a commercial kitchen environment, demonstrating proficiency with kitchen knives and prep tools, the ability to work quickly and accurately under pressure, and a passionate dedication to clean, health-focused ingredients and wellness cuisine. The personality fit is equally important; candidates should bring a positive attitude, a willingness to contribute to kitchen upkeep, and an enjoyment of a lighthearted, music-friendly work environment. Bonus skills include experience working with raw fish, familiarity with nutritional macro-tracking, and the ability to speak Spanish, which can contribute to the diverse and dynamic team culture. Overall, working at Raleigh Raw means being part of a community that values good energy, clean eating, and excellence in every aspect of kitchen operation, making it an inspiring and rewarding place to grow your culinary career.
