At Din Tai Fung, the Dumpling Prep / Trainee position serves as a critical role within the kitchen’s operation, focused on preparing and assembling the dumplings that have made the restaurant famous worldwide. This role is perfect for energetic, motivated individuals who enjoy working in a team-oriented, fast-paced environment and who want to develop specialized culinary skills. As part of a hands-on training program, Trainees learn the full dumpling preparation process—from measuring and cutting the dough to rolling skins, stuffing, sealing, arranging, and steaming dumplings—all while ensuring proper meat and allergen identifiers are applied. This role is integral to the kitchen team and enhances the overall guest experience by showcasing the star dish through meticulous preparation and attention to detail.

Training for this role involves shifts Monday through Friday from 4 PM to 10 PM, designed to teach Trainees the vital skills and knowledge needed for success. Upon completion of training, Trainees become part of the Dumpling Prep team, working in a show kitchen environment where they help maintain a clean and organized workspace, label items according to food safety procedures, and participate in ongoing development through monthly staff and dumpling meetings. Beyond technical skills, employees are also engaged in supporting functions like organizing kitchen inventory, lifting and moving equipment, and maintaining confidentiality of proprietary information, including recipes and standard operating procedures. The Dumpling Prep / Trainee role offers a competitive pay rate of $21.00 per hour and is positioned at the soon-to-open location in 1401 Brea Mall, Brea, CA 92821.

Job Duties

  • Prepare dumplings including measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings
