The Kitchen Operations Supervisor role at Marion Correctional Institution is a critical managerial position within Aramark’s correctional food services division. This role involves overseeing the day-to-day operations of the kitchen, ensuring that all meals and food items are prepared according to the production schedule and adhere to Aramark's rigorous standards for food quality and safety. The supervisor is responsible for instructing and delegating duties to staff and inmates, organizing tasks efficiently to enhance productivity, and maintaining cleanliness throughout the kitchen facility. Safety and compliance are paramount, and the supervisor must ensure all protocols, including food safety (HACCP guidelines) and security measures, are strictly followed.

Job Requirements

  • Must be at least 18 years of age
  • Minimum of 1 year of food preparation or related experience preferred
  • Previous supervisory experience preferred
  • Experience working with inmates is a plus

  • Knowledge of Aramark food preparation standards and HACCP guidelines
  • Ability to supervise and motivate diverse teams including inmates and staff
  • Strong organizational and scheduling skills
  • Ability to maintain high safety and cleanliness standards
  • Excellent communication skills
  • Experience in inventory management and equipment maintenance
  • Capability to adapt to changing operational requirements and client needs

Job Duties

  • Follow and uphold Aramark standards for food preparation and production
  • Review and approve production and temperature records
  • Supervise inmates during food preparation and tray assembly
  • Ensure meals are served promptly and efficiently in accordance with Aramark standards
  • Participate in food preparation and service
  • Print and distribute recipes while ensuring proper portion control and accommodation of special dietary needs
  • Ensure all food items are stored safely and organized in a hazard-free environment
  • Adhere to security procedures and ensure storage areas remain locked at all times
  • Ensure all kitchen tools, equipment, and keys are returned to designated secure locations
  • Create and manage schedules for cooks, inmates, and food service workers, including sanitation routines
  • Supervise and evaluate staff performance to promote teamwork, efficiency, and professional growth
  • Assist with inventory management, including the proper receiving and storage of food and food-related items
  • Process requisitions as needed and maintain accurate inventory records
  • Maintain logs for kitchen equipment upkeep and perform preventative maintenance
  • Follow HACCP guidelines to ensure safe food handling and storage
  • Ensure all food safety and temperature logs are completed accurately and take corrective action when necessary
  • Participate in meal preparation, storage, and assembly according to the 5 P’s (Participation, Pulls, Production, Portion Control, and Postproduction)
