The Kitchen Operations Supervisor role at Marion Correctional Institution is a pivotal leadership position designed to oversee and manage inmate labor and kitchen operations, ensuring that all meals and food items are prepared and served according to established standards and production schedules. This supervisory role is responsible for instructing, delegating, and organizing daily kitchen tasks, ensuring productivity and operational efficiency while maintaining the highest standards of cleanliness and food safety.

This position requires hands-on involvement as well as leadership skills to supervise both the inmate workforce and staff, coordinate schedules, comply with Aramark's rigorous food safety protocols, and ensure that all food service activities meet the institution's legal and safety regulations. The role adapts to dynamic changes in client needs and operational requirements, requiring flexibility, strong problem-solving skills, and a commitment to maintaining a secure and hazard-free kitchen environment.

The successful candidate will be at least 18 years of age and preferably have at least one year of food preparation or related experience, along with supervisory experience. Experience working within correctional environments or with inmate populations is considered advantageous. This role involves direct participation in food production processes such as meal preparation, tray assembly, ingredient distribution, and overseeing temperature controls, all while ensuring adherence to strict health and safety standards including HACCP guidelines.

As Kitchen Operations Supervisor, you will be integral in fostering teamwork, improving operational workflows, and supporting professional growth among the kitchen team. Responsibilities include maintaining detailed inventory records, ensuring proper equipment maintenance, and upholding security procedures within the kitchen, such as securing storage areas and managing keys and tools appropriately. Job Duties

  • Follow and uphold Aramark standards for food preparation and production
  • Review and approve production and temperature records
  • Supervise inmates during food preparation and tray assembly
  • Ensure meals are served promptly and efficiently in accordance with Aramark standards
  • Participate in food preparation and service
  • Print and distribute recipes while ensuring proper portion control and accommodation of special dietary needs
  • Ensure all food items are stored safely and organized in a hazard-free environment
  • Adhere to security procedures and ensure storage areas remain locked at all times
  • Ensure all kitchen tools, equipment, and keys are returned to designated secure locations
  • Create and manage schedules for cooks, inmates, and food service workers, including sanitation routines
  • Supervise and evaluate staff performance to promote teamwork, efficiency, and professional growth
  • Assist with inventory management, including the proper receiving and storage of food and food-related items
  • Process requisitions as needed and maintain accurate inventory records
  • Maintain logs for kitchen equipment upkeep and perform preventative maintenance
  • Follow HACCP guidelines to ensure safe food handling and storage
  • Ensure all food safety and temperature logs are completed accurately and take corrective action when necessary
  • Participate in meal preparation, storage, and assembly according to the 5 P's (Participation, Pulls, Production, Portion Control, and Postproduction)
