Job Requirements

  • High school diploma or equivalent
  • minimum 3 years kitchen management experience in a full-service, high-volume environment
  • knowledge of fresh fish preparation and scratch cooking
  • strong organizational and communication skills
  • ability to work 40-46 hours per week with a 5-day schedule
  • willingness to work in a busy and dynamic kitchen setting

Job Qualifications

  • Proven experience in managing high-volume kitchen operations
  • strong knowledge of seafood preparation techniques
  • experience in menu development and costing
  • excellent leadership and team management skills
  • ability to work under pressure in a fast-paced environment
  • culinary certification or degree preferred
  • familiarity with food safety regulations

Job Duties

  • Oversee fresh fish preparation from breakdown to presentation
  • manage scratch cooking processes
  • develop menus and daily specials
  • conduct food costing and budgeting
  • run high-volume kitchen operations efficiently
  • train and develop kitchen staff
  • ensure compliance with food safety and hygiene standards
