Job Requirements

  • bachelor's degree or certification from culinary school preferred
  • minimum of 3 years experience in a similar role
  • in-depth knowledge of kitchen health and safety regulations
  • ability to work in a fast-paced environment
  • physical ability to lift up to 50 pounds, bend, stoop, kneel, and stand for extended periods
  • ability to work nights and weekends as needed
  • excellent verbal and auditory communication skills
  • must be responsive and free from sedatives at work
  • willingness to disclose prescribed or over-the-counter pharmaceuticals affecting job performance

Job Duties

  • create weekly cook and dough schedules to accommodate business flow needs, individual staff schedules, and labor targets
  • follow the Hash Kitchen recipe book with exactness and precision
  • lead weekly back-of-house meetings and schedule shift manager and trainer meetings as needed
  • work closely with and train cooks and other kitchen staff in the preparation, cooking, and presentation of the food to Hash Kitchen standards
  • monitor training processes and meet regularly with trainers to discuss staff member progress and goals
  • lead quality control, food safety procedures, and restaurant food safety guidelines
  • check and maintain proper food holding and refrigeration temperature control points
  • monitor and enforce the use of temperature log
  • supervise and coordinate activities of cooks or workers engaged in food preparation
  • maintain back-of-house facilities and equipment to uphold safety and cleanliness standards of the brand
  • communicate with the General Manager when these standards cannot be met
  • oversee all product orders and products received
  • control food cost and usage by following requisition, storage, standard recipes, and waste control procedures
  • perform other duties as required by upper management
