The Kitchen Manager role at Alamo Drafthouse Cinema is a pivotal leadership position responsible for elevating the kitchen team, maintaining high culinary standards, and ensuring operational success. The position offers an annual compensation range of $65,000 to $75,000, plus an incentive bonus based on performance, reflecting the importance of financial discipline and team development in driving venue profitability. The Kitchen Manager will oversee all aspects of kitchen operations, including food quality control, inventory management, ordering processes, labor cost monitoring, staffing, and sanitation standards. Job Requirements

  • High school diploma or equivalent
  • minimum 3 years experience in high volume theater, restaurant, or entertainment venue kitchen management
  • ServSafe certification and local health cards if applicable
  • ability to work nights, weekends, and holidays
  • ability to stand for prolonged periods and perform physical tasks including lifting up to 50 pounds
  • basic computer skills with Microsoft Office and G-Suite
  • strong leadership and communication skills
  • ability to work a flexible schedule with over 45 hours weekly during peak seasons
  • commitment to food safety and sanitation practices
  • ability to climb stairs

Job Qualifications

  • At least 3 years of high volume theater, restaurant, or entertainment venue experience
  • ServSafe Certification
  • local Health Cards as required

Job Duties

  • Monitors inventory and reports results to the General Manager
  • develops hourly teams on proper utilization of the inventory system
  • maintains, controls, and develops food cost acumen by ordering and receiving products appropriately
  • utilizes PMIX to minimize waste and establish accurate pars and prep lists
  • maintains appropriate staffing levels by tracking labor and maintaining budgeted staffing expectations
  • interviews and hires kitchen team members
  • participates in core menu and limited-time offer (LTO) rollouts including planning item rotation, depletion, additions, and team training
  • maintains appropriate small ware supplies and ordering practices
  • upholds standards of behavior defined by the company’s Core Values, Code of Conduct, and Operational Guidelines
  • ensures a safe and sanitary working environment minimizing risk of incidents and food handling-related issues
  • sets high food quality expectations by maintaining recipe adherence, line checks, portion controls, cleanliness, organization, food storage, and sanitation standards
  • reviews ticket times to ensure prompt food preparation and delivery
  • conducts line checks, temperature logs, and other kitchen systems as coaching tools
  • schedules kitchen teams using forecasting and labor proforma tools
  • posts and communicates schedules timely
  • leads by example and coaches communication within the venue
  • maintains the kitchen communications board and verifies teammate knowledge
  • conducts daily shift meetings and larger kitchen team meetings to keep teams informed and engaged
