Job Description

Good Time Charley’s is a renowned dining and nightlife establishment located in Ann Arbor, Michigan. For over 40 years, it has stood as a beloved hotspot for University of Michigan students, locals, and visitors alike. The establishment operates alongside Cantina and BTB Burrito, also popular regional favorites specializing in Mexican cuisine and burritos. All three concepts share a vibrant, fast-paced kitchen at 1140 S University, serving a diverse array of customers in a high-volume environment. Part of the Watershed Hospitality Group, Good Time Charley’s prides itself on delivering exceptional dining experiences through efficient operations, teamwork, and a commitment to quality customer service. Its longstanding reputation has made it a staple of the Ann Arbor culinary scene, blending a fun and casual atmosphere with the hustle demanded by a successful restaurant and nightlife venue.

The role of Chef/Kitchen Manager at Good Time Charley’s is a crucial leadership position that oversees all back-of-house operations across the three concepts: Good Time Charley’s, Cantina, and BTB Burrito. This position demands a hands-on leader who is proficient in every kitchen role and capable of managing the complexities of a high-volume, triple-concept kitchen. The successful candidate will be responsible for upholding food quality, kitchen efficiency, and team cohesion while managing food costs and labor. The Chef/Kitchen Manager will spearhead staff management efforts by hiring, training, and supervising kitchen teams. Building a strong, productive work environment through trust and communication is essential in this role. Operational excellence is another key focus — maintaining consistent food preparation, presentation, and service standards across all three brands. A significant part of the role entails meticulous inventory and cost management, including ordering food, monitoring inventory, and liaising with vendors to meet financial targets. Additionally, scheduling duties utilizing tools like 7shifts to optimize labor costs and staff availability are required.

This full-time position demands availability for 45 to 55 hours per week, including nights and weekends, to meet the needs of a busy, multi-concept kitchen. The right candidate should have proven management experience in similar high-volume environments and possess strong leadership and communication skills with a positive attitude. Basic proficiency in tools like Google Docs and Sheets is preferred but not mandatory.

Good Time Charley’s offers a competitive salary, growth opportunities within the Watershed Hospitality Group, paid time off, meal benefits, company-wide discounts, and a fun, casual work atmosphere that encourages self-direction and professional development. This is an excellent opportunity for culinary professionals looking to advance their careers in a dynamic and iconic Ann Arbor establishment where they can make a tangible impact on both operations and team culture.
