The role of Kitchen Manager at Perkins is a pivotal one. This position manages all back-of-the-house operations, ensuring the restaurant meets planned sales and profit levels through the efficient implementation, management, and enforcement of company policies, procedures, programs, and performance standards. As Kitchen Manager, you will lead the back-of-house team, supervising and directing employees to deliver exemplary guest experiences and maintain a safe, clean, and efficient kitchen environment. Responsibilities include assisting the General Manager in workforce planning, training, hiring, and maintaining compliance with health and safety standards including ServSafe certification. You will be accountable for inventory control, food safety, financial reporting, and ensuring the highest quality food preparation standards are met at all times. Job Requirements

  • High school diploma
  • one to two years supervisory experience preferably in food production
  • must be able to communicate clearly with employees, vendors, and guests
  • must be able to coordinate multiple tasks simultaneously
  • must be able to stand extensively without breaks
  • must tolerate exposure to heat, steam, smoke, cold, and odors
  • must be able to bend, reach, walk
  • must be able to reach heights of approximately 6 feet and depths of 2.5 to 3 feet
  • must have high level of mobility and flexibility
  • must be able to fit through openings 30 inches wide
  • must be able to work irregular hours under heavy pressure and stress
  • must be able to carry trays weighing 20 pounds for distances up to 30 feet
  • must be able to lift up to 50 pounds

Job Qualifications

  • One to two years previous experience in supervisory role, preferably in food production
  • high school diploma
  • some college or degree preferred

Job Duties

  • Assist the General Manager in planning and analyzing administration and operations manpower
  • responsible for achieving plan profit levels while ensuring maximum guest satisfaction
  • assist in planning and analysis of restaurant unit manpower, ensuring development and training of all employees, including subordinate managers
  • assist General Manager in employment and restaurant staffing including recruitment, training, and new hire orientation
  • attend University of Perkins and complete all coursework
  • achieve and maintain ServSafe certification
  • perform and assist in all functions for all positions in the restaurant
  • ensure menu items are prepared, portioned, and presented properly in a clean, safe, and sanitary manner according to procedures and standards
  • monitor food temperatures to reduce risk of food-borne illness
  • ensure restaurant compliance to productivity and service standards by scheduling a sufficient number of well-trained employees
  • manage the facility and equipment through preventive maintenance, repairs, and safety adherence
  • maintain inventory levels for food and non-food items
  • manage accurate financial data including supplies, inventories, food cost, payroll, and expenses
  • anticipate and correct system breakdowns to maintain guest satisfaction
  • prepare and review financial reports
  • attend restaurant and regional meetings and make presentations as required
