The Kitchen Manager role at Fox Bros. BBQ - Toco Hills plays a critical leadership role within the kitchen operations. Reporting directly to the Executive Sous Chef, the Kitchen Manager oversees all back-of-house activities to ensure the smooth and efficient preparation of dishes that meet the company's standards. This position demands a combination of culinary expertise, organizational skills, and team leadership to maintain consistent food quality and presentation. The Kitchen Manager is responsible for managing kitchen staff, guiding training and development, ensuring compliance with food safety regulations, controlling inventory and costs, and supporting administrative tasks related to kitchen operations.

The role involves hands-on participation in food preparation, line management, and service execution, requiring flexibility and a strong work ethic. The Kitchen Manager must be adept at managing time effectively during busy service periods, ensuring that orders are completed promptly without compromising quality. This position requires close collaboration with the Executive Sous Chef and other management personnel to align kitchen activities with overall restaurant goals. Job Qualifications

  • 2-5 years of kitchen leadership experience (Kitchen Manager, Sous Chef, or similar role)
  • Strong knowledge of food safety standards and kitchen operations
  • Proven ability to manage food and labor costs
  • Strong leadership, communication, and organizational skills
  • Ability to work nights, weekends, and holidays as needed
  • ServSafe Certification preferred

Job Duties

  • Oversee all daily back-of-house operations
  • Ensure food is prepared and presented according to company recipes and quality standards
  • Maintain consistency in taste, portioning, and presentation
  • Manage ticket times and ensure efficient kitchen flow during service
  • Assist with prep, line execution, and expediting when necessary
  • Supervise, train, and coach kitchen staff
  • Conduct performance evaluations and provide ongoing feedback
  • Enforce company policies and kitchen procedures
  • Create and manage staff schedules to meet labor targets
  • Foster a culture of accountability, teamwork, and professionalism
  • Ensure compliance with all local health department regulations
  • Maintain proper food handling, labeling, storage, and rotation (FIFO)
  • Conduct routine line checks and temperature logs
  • Ensure cleanliness and organization of kitchen and storage areas
  • Monitor food cost and labor cost targets
  • Oversee ordering, receiving, and inventory management
  • Reduce waste and control portioning to maintain profitability
  • Assist in monthly inventory counts
  • Complete daily kitchen reports and communication logs
  • Monitor equipment maintenance needs and coordinate repairs
  • Participate in management meetings as required
