The role of the Junior Sous Chef at St. Ann's Community is a vital position within the food service department, responsible for delivering exceptional culinary experiences across various campuses. This full-time position involves working as a float Junior Sous Chef supporting the food service operations at St. Ann's Irondequoit and Webster locations. The Junior Sous Chef plays an essential role in preparing and presenting high-quality meals that comply with food safety regulations and meet the standards expected by the community. Working under general supervision, the Junior Sous Chef is responsible for preparing specified quantities of hot and cold food items for all meals including breakfast, lunch, dinner, and special functions. The individual must ensure that food is properly cooked, seasoned, attractively presented, and served in a pleasant environment consistent with established food specifications. The position requires versatility in cooking methods, strong organizational skills to manage daily workflow, and adherence to sanitary standards.
The Junior Sous Chef wears a clean uniform with the appropriate name badge and adheres strictly to department protocols, maintaining a neat and professional appearance at all times. This role entails responsibility for short order cooking and restaurant-style service, food storage with proper dating, equipment operation and cleaning, daily quality checks of food prepared, and inventory management. Additional duties include supporting various food outlets such as catering and employee cafes, attending department meetings, conducting bi-weekly kitchen audits, and assisting with monitor reports. Flexibility in scheduling is expected, with day and evening shifts available to meet the needs of the campuses. Job Duties
- Daily reports to work in clean uniform with name badge clean and proper shoes and assigned hat
- Follows all department codes and standards
- Responsible for proper handling and preparation of food in accordance with state county sanitary regulations
- Prepares specified amounts according to recipes hot and cold food items for breakfast lunch dinner and special functions under general supervision
- Responsible for short order cook items restaurant type style service
- Plans and organizes the work day to meet deadlines reads menus daily and utilizes leftover food items correctly under general supervision
- Completes physical inventory worksheets for ordering and month end calculations under general supervision
- Responsible for proper storage and dating of food ingredients and utensils including leftovers and advance preparation
- Operates cleans and maintains all department equipment and work areas reporting malfunctions immediately
- Tastes all food items daily to ensure quality standards makes necessary adjustments and plans for run outs
- Completes bi-weekly audits of main kitchen
- Supports other food outlets including catering and employee cafe
- Attends all assigned department meetings
- Completes monitor reports as required
- Maintains proper food temperatures and documents them
- Keeps kitchen cooler freezer storeroom and employee work areas clean and orderly
- Performs other duties as assigned by Food Service Manager or Executive Chef
