We are currently seeking a full-time Junior Sous Chef to join our culinary team at Lambeau Field. This role offers a dynamic and engaging environment where you will be an essential part of delivering high-quality food and excellent guest experiences on game days and special events. The Junior Sous Chef will play a crucial role in supporting the kitchen operations by ensuring proper sanitation, storage, and maintenance of equipment while supervising food preparation and culinary staff. This position requires a motivated individual who thrives in a fast-paced, team-oriented atmosphere and is passionate about culinary arts. As a Junior Sous Chef, you will create weekly menus using either personal or established recipes, oversee food preparation to maintain top-notch quality and presentation, and ensure all food safety and sanitation standards are rigorously followed. You will supervise culinary team members and collaborate with service personnel and restaurant managers to guarantee guest satisfaction. Maintaining kitchen equipment in optimal working condition and managing food costs within set parameters will be key responsibilities. Additionally, you will oversee proper food storage, labeling, rotation, and waste control to minimize spoilage. Shift schedules for this position include days, evenings, overnight shifts, holidays, weekends, and events, with overtime as needed. Physical demands include the ability to lift up to 50 pounds and standing or walking for the entire shift.
This role is ideal for candidates with a high school education, preferably with experience or enrollment in a culinary program, and at least six months of back-of-the-house foodservice experience. Job Duties
- Create weekly menus from personal or established recipes
- supervise food prep work while maintaining food quality, plate presentation, and sanitation standards
- verify that all portion sizes, recipes, quality standards, department rules, policies, and procedures are maintained
- supervise all culinary team members and food production in their area
- partner with service personnel and restaurant managers to ensure guest satisfaction
- maintain all kitchen equipment in full working order
- maintain the cleanliness and organization of walk-ins and freezers at all times
- actively work to maintain food cost within parameters set by the Chef and leadership
- effectively supervise proper breakdown, rotation, labeling, dating, and storage of food
- use waste control guidelines and record all waste on a spoilage sheet
