The role of Sous Chef at Thompson Austin is a pivotal opportunity within the hospitality industry, designed for a culinary professional eager to advance into a Chef de Cuisine position within one to two years. This full-time position centers on managing the daily kitchen operations of Fifth Street Diner and Royale Room, which are dynamic restaurants known for their high-volume service and commitment to excellence. Fifth Street Diner serves 50-80 covers on typical weekdays and scales to 150-300 covers during peak weekends, while Royale Room consistently delivers between 30-80 covers each evening. The ideal candidate for this position is a confident culinary leader who thrives under pressure and excels at building efficient and effective kitchen systems that promote consistency and superior execution.
The Sous Chef leads from the line and acts as a central figure during peak service periods, ensuring that food quality, timing, and guest satisfaction meet the Hyatt and Thompson brand standards. The role demands hands-on leadership with a strong focus on breakfast, lunch, and some dinner service operations, as well as expediting during rush hours. The candidate must demonstrate calmness under pressure, excellent communication skills, and a capacity to mentor and develop the kitchen team. Operational responsibilities include managing ordering, inventory, vendor relations, labor scheduling, food cost control, and building structured preparation systems to support consistent kitchen performance. Financial acumen is essential as is the ability to align staffing with forecasted business volume to maintain target costs.

Job Requirements
- high school diploma or equivalent
- 1-2+ years in high-volume restaurant leadership role
- experience leading breakfast/brunch service preferred
- experience with ordering, inventory, and scheduling

Job Qualifications
