The Jr. Sous Chef position with SSA Group at Utah's Hogle Zoo offers a unique opportunity for culinary professionals who are passionate about creating memorable food experiences in an exciting and dynamic environment. Reporting directly to the Sous Chef, the Jr. Sous Chef plays a pivotal role in delivering 452 Hospitality by ensuring warm and welcoming interactions with every guest and client. This role encompasses a broad spectrum of responsibilities including oversight of kitchen operations, food safety, staff management, and quality assurance. The Jr. Sous Chef is tasked with managing back-of-house operations, ensuring all safety standards and operational protocols are met. They provide hands-on support in daily prep, staff training, and maintaining clean and organized workspaces.

Candidates for this role will need to be flexible, organized, and skilled in multitasking within a fast-paced setting. The position requires effective leadership abilities as the Jr. Sous Chef supports the Sous Chef in coaching, managing employee performance, and maintaining communication across teams to uphold service and quality standards. This role also involves active problem-solving and decision-making to swiftly address guest feedback and operational challenges. The Jr. Sous Chef will have the opportunity to foster employee development, contribute to menu planning, and participate in the overall operational success of the location.

Job Duties

  • Live out 452 Hospitality by delivering warm, welcoming, and memorable experiences for every guest and client
  • Ensure restaurant/location is adequately prepped and staffed (BOH) for daily operation
  • Oversight of location kitchen duties, ensuring quickservice, food service, safety and quality, availability, merchandising, and guest service standards are all met and exceeded
  • Oversight of safety logs, including food temperatures, rotation, and waste
  • Ensures proper uniform, hygiene, handwashing, and glove use with staff
  • Responsible for supporting SSAfety training with knife handling skills, ensuring all direct reports display proper use of knives and slicers
  • Creates daily prep and item lists, delegating to employees as necessary
  • Actively helps to support operations and fill holes as necessary to ensure smooth service
  • Maintains a checklist of routine or daily cleaning tasks and ongoing projects or menu planning
  • Assists the Sous Chef in assigning associates to duties, coaching through projects, daily tasks and guest interaction
  • Actively and efficiently responds to guest and client feedback, with a report to the operations manager to ensure that any potential complaints are mitigated against further occurrence
  • Oversees personnel duties, including training new employees, issuing performance reviews, managing and issuing progressive documentation, reporting employee attendance and hour discrepancies, overseeing break management, inspecting equipment, assisting team with task completion, communicating with management about service or quality issues, working with restaurant supervisors to ensure standards, and complying with all applicable laws
  • Maintain a clean, safe, and organized work environment
  • Uphold and demonstrate a complete understanding of company policies and procedures
