This position is for a seasoned Cook III who is responsible for preparing a variety of foods including meats, seafood, poultry, vegetables, soups, and other hot food items with precision and efficiency. The role involves not only cooking but also preparing and portioning food products according to standard recipes and portion sizes. The Cook III plays a critical part in the kitchen’s ability to maintain smooth service operations by stocking supplies, maintaining cleanliness, and adhering to all kitchen policies and health regulations. With an emphasis on quality control, this role requires a cook who can consistently produce high-quality dishes and take individual responsibility for the food products served.

The successful applicant will demonstrate advanced culinary skills such as knife work (carving, slicing, dicing, julienne, brunoises, and mincing) and possess a solid knowledge of cooking techniques applied across a diverse menu. In addition to cooking duties, the Cook III assists with inventory management, order processing, and ensuring the safety and sanitation of kitchen areas. The role demands the ability to work independently with speed and accuracy while also being an effective team member and a positive leader when more senior chefs are absent.

The role requires a minimum of 1-3 years of cooking experience, preferably within a high-volume kitchen setting. Additionally, candidates must be able to effectively communicate in English and have solid culinary and knife skills. While not always mandatory, certain outlets require Alcohol Awareness Certification. Physical demands include the ability to stand or walk for extended periods, lift heavy products up to 50 pounds, and work in varying environmental conditions including different temperatures, noise levels, and occasional exposure to smoke.

Job Requirements

  • Ability to walk, stand, or sit for long periods of time
  • Ability to lift and move product up to 50 lbs
  • Ability to work in varying temperature, noise, and lighting conditions
  • Ability to perform fine finger manipulation
  • Alcohol awareness certification required for certain outlets

Job Qualifications

  • High school diploma or equivalent

  • Basic knowledge and experience in general cooking styles, techniques, and understanding of how to read and execute recipes
  • Solid knife and culinary skills
  • Alcohol awareness certification required for certain outlets

Job Duties

  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and a variety of other kitchen equipment
  • Assume 100% responsibility for quality of products served
  • Know and comply consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies, and procedures
  • Stock and maintain sufficient levels of all food products and supplies at line stations to assure a smooth service period
  • Portion food products prior to cooking according to standard portion sizes and recipe specifications
  • Maintain a clean and sanitary workstation area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection ovens, flat top range, and refrigeration equipment
  • Prepare items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating
  • Follow proper plate presentation and garnish set up for all dishes
