This particular role is designed to specialize in the preparation and cooking of a broad array of meats, fish, vegetables, soups, and other hot food products. Key responsibilities include a wide variety of food preparation activities such as preparing meats, seafood, poultry, vegetables, as well as soups, dressings, gravies, and sauces. The position also requires the incumbent to skillfully operate kitchen equipment and ensure that all products maintain freshness and quality. The professional in this role will also be expected to contribute to the continuous improvement of menu and processes through suggestions and collaboration.

In addition to cooking tasks, this role demands impeccable workstation cleanliness and maintenance, effective communication with management and team members, as well as engagement with guests' needs. The role requires a minimum of 2 years of experience as a Line Cook or an equivalent role, preferably within a high-volume kitchen, and the individual must possess advanced cooking knowledge and skills. A high school diploma or equivalent is mandatory, as is the ability to communicate effectively in English. Additionally, the candidate must hold an Alcohol Awareness Certification. Physical stamina is essential due to the demands of standing or walking for extended periods and the ability to lift up to 50 pounds.

Job Requirements

  • Minimum of 2 years as a line cook or equivalent

Job Qualifications

  • High school diploma or equivalent
  • Minimum of 2 years experience as a line cook or equivalent in a high-volume kitchen
  • Advanced knowledge and experience in cooking styles and techniques
  • Ability to read, understand and execute recipes

  • Effective verbal and written communication skills in English

Job Duties

  • Prepare a variety of meats, seafood, poultry, vegetables by portioning, battering, breading, seasoning, and/or marinating for cooking
  • Assume responsibility for quality of products served
  • Execute Nugget standards for portion sizes, cooking methods, quality, sanitation, policies, and procedures
  • Stock and maintain food products and supplies at line stations
  • Produce basic soups, dressings, gravies, and sauces
  • Prepare food items on at least two kitchen stations or 75 percent of total menu
  • Maintain a clean and sanitary workstation area
  • Follow proper plate presentation, seasoning, and garnish setup
  • Handle, store, heat, cool, thaw, and rotate all products per standard
  • Complete food prep assignments during off-peak periods
  • Properly label and date all products
  • Apply advanced knife skills such as carving, slicing, dicing, julienne, brunoise, mince
  • Maintain knowledge of food products and cooking techniques
  • Execute tickets and perform duties with diligence, speed, and accuracy
  • Submit suggestions for specials, menu items, and process improvements
  • Detect and correct irregularities in quality and consistency
  • Assist in correcting standards with line cooks
  • Assess food temperature at specified intervals and use thermometers
  • Ensure cleanliness and organization of kitchen areas
  • Communicate effectively within team and with guests
  • Use recognition system to acknowledge team members
  • Follow policies, procedures, and regulations
  • Perform work safely and report unsafe conditions
  • Maintain a positive and professional image
  • Ensure regular predictable attendance
  • Perform other duties as assigned
