The Indian Cuisine Sous Chef position located in Boston offers an exciting opportunity for a dynamic culinary professional passionate about Indian and Middle Eastern cuisines. As a Sous Chef, you will be instrumental in creating authentic, vibrant dishes that capture the essence of Indian cuisine, ranging from rich curries and aromatic biryanis to sizzling tandoori specialties. The position demands mastery in various cooking techniques such as roasting, braising, tempering, and slow-simmering, ensuring every dish is a deep, memorable flavor experience.

The role requires working efficiently in a fast-paced, high-volume kitchen environment with multiple stations, upholding rigorous hygiene and safety protocols under the Food Safety Management System. Emphasis is placed on consistency, portion control, and minimizing waste, aligning with DO & CO's high standards. In addition to technical culinary skills, the ideal candidate should have the flexibility to work various shifts, including nights, weekends, and holidays, and possess the desire and ability to travel or work at multiple events both domestically and internationally. Job Requirements

  • Minimum 3 years of experience in Indian cuisine cooking
  • Culinary degree or relevant certification preferred
  • Ability to work efficiently in a fast-paced environment

  • Physical endurance to stand for long periods
  • Willingness to travel domestically and internationally
  • Flexibility to work varying shifts including nights, weekends, and holidays

Job Qualifications

  • Minimum 3 years of experience as a cook specializing in Indian cuisine

Job Duties

  • Master authentic cooking techniques such as roasting, braising, tempering, and slow-simmering
  • Ensure consistency by preparing all dishes according to established recipes, portion standards, and presentation
  • Monitor ingredient usage to minimize waste while meeting quality standards
  • Operate efficiently across multiple kitchen stations in a fast-paced, high-volume environment
  • Maintain a clean, organized workstation and uphold hygiene and sanitation standards
  • Follow all food safety protocols and promptly report concerns
  • Experiment and innovate to continuously refine and elevate dishes with creativity and curiosity
