The role of Valley Goat Butcher / Specialized Production Cook is a highly skilled position focused on the precise fabrication, preparation, and production of premium proteins and specialty ingredients essential to the restaurant’s culinary operations. This role requires expertise in butchery, fish fabrication, sausage making, and other advanced culinary production techniques. The butcher/specialized production cook is responsible for consistently delivering exceptional quality and craftsmanship through meticulous preparation and attention to detail.
In this position, you will be tasked with executing specialized tasks such as deboning, trimming, filleting, curing, and portioning proteins and seafood. You will also prepare foundational culinary components including stocks and sauces that form the base of many dishes served across Valley Goat and Treehouse Hotel’s varied food outlets. Maintaining proper inventory levels, ensuring accurate labeling and storage, and adhering strictly to food safety, sanitation, and HACCP standards are critical components of your responsibilities.
Collaboration with chefs and the wider culinary team is an important aspect of this role, contributing to menu development and seasonal offerings while meeting daily production needs efficiently. Furthermore, you will take pride in maintaining an exceptionally clean and organized production area to support smooth operations. Job Requirements
- Minimum of 3 years of professional culinary experience with an emphasis on butchery charcuterie or specialized production
- Demonstrated expertise in protein fabrication fish butchery portioning and sausage production
- Experience preparing foundational culinary components including stocks sauces and other production items
- Strong organizational skills with exceptional attention to detail
- Thorough understanding of kitchen weights measurements recipe execution and yield management
- Ability to work independently while managing multiple production priorities
- Commitment to teamwork professionalism and continuous improvement
- Working knowledge of food safety sanitation and HACCP principles
- Experience in high-volume hotel or chef-driven restaurant environments preferred
