Job Description

The Queen Mary Hotel, located in Long Beach, California, is a historic and iconic ocean liner turned luxury hotel that offers guests a truly unique accommodation experience. Famous for its polished wood paneling, original 1930s artwork, and distinctive Art Deco style, the hotel artfully combines history with modern hospitality. Each stateroom offers a glimpse into what transatlantic travel was like during the 1930s to 1950s, making every visit an immersive journey back in time. As a venue, the Queen Mary is not just a place to stay but an entire experience, featuring historic tours, paranormal attractions, a spa, shops, and various exciting events that engage visitors with its rich maritime legacy and culture.

The role of Sous Chef at the Queen Mary Hotel is a crucial position within its banquet kitchen. As the creative driving force, the Sous Chef is responsible for preparing delicious and impressive dishes that enhance the guest experience. This position requires someone who can balance classic culinary techniques with innovative menu creation, especially for special events and banquet services. The Sous Chef will collaborate with the kitchen team to maintain a clean, safe, and organized environment while managing food costs and reducing waste by maximizing ingredient use. The role is a leadership position designed for an individual who thrives on creativity, attention to detail, and maintaining high standards in a high-volume, full-service restaurant setting.

In addition to culinary expertise, the Sous Chef is also responsible for fostering a positive team environment and upholding Aimbridge Hospitality's standards for excellence. This includes welcoming guests with warmth, motivating and coaching kitchen staff, ensuring proper training and skill development, managing budgets and inventory, and overseeing banquet displays. The ideal candidate will have a strong background in culinary arts, demonstrate composure and effective problem-solving under pressure, and communicate clearly with both colleagues and guests. This is an overtime eligible managerial role with compensation calculated accordingly.
