The role of Kitchen 3rd at PAQ, Inc. supports the Kitchen Lead and Kitchen Lead 2nd in overseeing the preparation and cooking of high-quality dishes in a fast-paced retail grocery environment. This position requires strong culinary expertise, leadership skills, and the ability to participate in menu planning, inventory management, and staff development. The Kitchen 3rd plays an essential role in ensuring the kitchen operates efficiently, food quality standards are maintained, and sanitation and food safety regulations are strictly followed. The position involves supervising kitchen staff, mentoring new cooks, conducting tastings and quality checks, and implementing cost control policies related to food, labor, and overhead. Additionally, physical endurance is important to meet the demands of working long shifts, standing and walking for extended periods, and handling the physical aspects of kitchen operations safely. PAQ, Inc. is seeking candidates who are passionate about culinary arts, experienced in kitchen operations, and capable of managing multiple priorities while maintaining professionalism and performance standards. Job Requirements

  • must be 18 years of age or older
  • high school diploma or equivalent
  • over three years of experience as a cook preferred
  • ability to stand and walk for extended periods, typically 8-hour shifts
  • ability to lift and carry items up to 25 pounds frequently and up to 50 pounds occasionally
  • ability to perform repetitive motions
  • physical stamina to work in a fast-paced environment
  • ability to work variable hours including weekends, evenings, and holidays
  • ability to maintain high standards of sanitation, food safety, and professionalism
  • ability to wear professional attire including company-issued shirts and safety shoes

Job Qualifications

  • high school diploma or equivalent
  • culinary school diploma is a plus
  • over three years of experience as a cook is preferred
  • previous supervisory experience is a plus
  • strong culinary skills
  • leadership and team management abilities
  • knowledge of advanced cooking techniques, kitchen operations, food safety standards, and menu planning
  • effective communication skills
  • precision in measuring ingredients and following recipes
  • ability to manage inventory and time efficiently

Job Duties

  • assist in preparing and cooking a variety of complex and high-quality dishes
  • support the planning, innovating, and implementing of menu development
  • assist in estimating food needs, procuring supplies, and managing kitchen inventory
  • review recipes and menus to assign prices and control food, labor, and overhead costs
  • implement food apportionment policies for cost control
  • manage and coach kitchen staff, ensuring high standards of performance and professionalism
  • ensure efficient and timely food production by monitoring food preparation methods, portion sizes, and garnishing
  • conduct tastings and smell tests to ensure food quality
  • ensure quality standards by following the FIFO (First In, First Out) methodology
  • support high nutrition standards and strict sanitation and food safety guidelines
  • mentor new cooks and support apprenticeship training
  • perform other duties as assigned
