The role of the Sous Chef at Honeycomb Grill Restaurant within Solitude Mountain Resort is a critical and rewarding position designed for creative culinary professionals eager to advance their career in fine dining and kitchen management. This full-time, year-round, hourly position invites candidates to join the Food and Beverage division as a key leader supporting the Kitchen Chef to ensure seamless operation of kitchen activities and food production. The Sous Chef will have hands-on involvement in menu innovation, quality control, and kitchen staff leadership. The ideal candidate thrives in a fast-paced environment, maintains high standards for food quality, taste, and presentation, and is skilled in managing diverse kitchen teams, including training novice cooks.

Tasked with taking charge in the absence of the head chef, the Sous Chef will uphold the operational excellence of the kitchen, ensuring compliance with food safety and sanitation standards, and steering the team to meet or exceed the distinctive Alterra brand benchmarks. Candidates must bring a background rich in managing sizeable kitchen staff and possess expertise in fine dining, international cuisines, and special diet accommodations. Job Requirements

  • Five years of managing a kitchen operation of ten or more cooks
  • Experience in high-quality, fine dining
  • Certification through the Health Department in the Serve Safe Program
  • Experience in projecting and maintaining food and labor costs
  • Experience with international foods, American regional cuisines, and special diets
  • Experience managing a diverse crew, many with little or no kitchen experience
  • Skilled in guest interactions, accuracy, and speed in handling emergency situations
  • Capable of standing for extended periods of time and lifting up to 30 lbs
  • Willing to work flexible work schedules that may include holidays and weekends

Job Qualifications

Job Duties

  • Stay knowledgeable of current food trends and develop new menu items
  • Be familiar with international, domestic, and special diet cuisine preparation
  • Operate the kitchen and direct kitchen personnel
  • Maintain consistency of product with great attention to food quality, taste, and presentation
  • Comply with and enforce sanitation regulations and safety standards
  • Ensure that the kitchen operates in a timely way that meets or exceeds Alterra brand standards
