Job Duties
- lead and manage daily sushi kitchen operations
- prepare high-quality sushi, sashimi, nigiri, rolls, and specialty dishes
- develop seasonal menus and innovative sushi offerings
- ensure consistency, presentation, and freshness of all dishes
- manage seafood ordering, inventory, and supplier relationships
- maintain strict food safety, sanitation, and HACCP standards
- train, mentor, and supervise sushi chefs and kitchen staff
- control food costs, waste, and portion management
- collaborate with management to improve guest satisfaction and profitability
- ensure kitchen cleanliness and compliance with health regulations
