The role of Head Sous Chef at JOEY Restaurants offers a highly rewarding opportunity to directly contribute to the success of a multi-million-dollar restaurant. This full-time position comes with an annual salary ranging from $90,000 to $110,000, depending on experience and qualifications. In this pivotal role, you will be responsible for leading a kitchen team in delivering memorable, consistent, and iconic culinary experiences that exceed guest expectations. Your leadership will extend to managing labor budgets, maintaining pristine kitchen and restaurant environments, and ensuring the use of the highest quality ingredients and food products.

As a Head Sous Chef, coaching, mentoring, and motivating your team are core responsibilities. You will foster continuous learning, growth, and development among your partners while maintaining operational excellence. Your daily duties will include overseeing all aspects of food preparation and cooking, ensuring compliance with JOEY's recipe standards, and upholding rigorous food safety and sanitation protocols. You will also collaborate with other kitchen stations to ensure smooth and efficient service.

Beyond culinary expertise, the Head Sous Chef plays a critical role in recruitment, retention, and training. You will be instrumental in building a high-performing team by selecting the right candidates, nurturing their skills, and driving positive candidate experiences. Job Requirements

  • Must have or be able to obtain valid local and/or state Food Handler and California Responsible Beverage Service certifications

Job Duties

  • Support your team in the preparation of all ingredients and food products to fulfill prep lists, par levels, and recipe standards
  • Utilize various preparation and cooking methods to ensure the quick, precise creation of our menu items in accordance with JOEY recipes
  • Maintain prep and cooking areas in a clean, sanitary and safe manner
  • Ensure clean, organized, and maintained refrigerators, cooler drawers, ovens, preparation, and dry storage areas
  • Train partners on the instructions and guidelines for safe usage of kitchen equipment and cleaning compounds
  • Fulfill recruitment needs, impact positive candidate experiences, and select and retain your team
  • Support your team in training and development of technical knowledge and world-class execution of JOEY tasks and standards
  • Communicate daily focus and feedback to partners
  • Manage in-store budgets, food costs, and labor
  • Impact the delivery of Iconic Hospitality and coach the kitchen team as needed to fulfill experience standards for our guests
  • Follow all food service and handling safety precautions and procedures
