As a Zuma Head Sommelier, you will play a pivotal role in curating and managing the wine program to enhance every guest's dining experience. Your expertise in wine and sake selection and service will elevate the overall beverage program, contributing directly to the restaurant's success. This is a unique opportunity to lead an extensive and diverse wine list, ensuring that it complements Zuma’s contemporary Japanese cuisine while appealing to a broad range of preferences and occasions. Your role involves conducting regular tastings and evaluations, maintaining inventory accuracy, collaborating with the culinary team on wine pairings, and overseeing wine service standards to ensure each guest enjoys the highest quality experience.

Additionally, as the Head Sommelier, you will take on the responsibility of training and coaching staff to deliver impeccable wine and sake knowledge, enhancing both their skills and the restaurant’s ability to provide exceptional service. Your leadership will ensure wines are stored, handled, and served according to best practices to preserve quality and maximize guest satisfaction. You will also support overall restaurant operations by assisting on the floor when needed, demonstrating flexibility and teamwork.

Job Requirements

  • High school diploma or equivalent
  • proven experience as sommelier or similar role in fine dining
  • strong knowledge of wine and sake
  • ability to conduct wine tastings and assessments
  • excellent communication and training skills
  • ability to work in a fast-paced environment
  • flexible availability including nights, weekends, and holidays

Job Qualifications

  • Certified Sommelier or higher certification preferred
  • previous experience as a Sommelier in a fine dining restaurant or similar upscale establishment
  • deep knowledge of wine regions, grape varietals, production methods, and wine service techniques
  • passion for Japanese cuisine
  • natural team player with friendly, customer-oriented skills
  • ability to work flexible hours including evenings, weekends, and holidays

Job Duties

  • Maintain and develop an extensive and diverse wine list that complements the cuisine and reflects the style and standards of Zuma
  • conduct regular tastings and evaluations of new and existing wines to assess quality, value, and suitability for inclusion
  • conduct weekly inventory assessments to ensure accurate stock levels
  • collaborate with the culinary team to develop wine pairing, guidance and expertise to guests to enhance their dining experience and promote sales of wine, sake and other beverages
  • oversee wine service standards and procedures, ensuring that wines are stored, handled, and served according to best practices and train and coach staff as needed to maintain high standards of service
  • conduct wine training and education sessions for staff to increase their knowledge and understanding of wine and sake
  • support overall restaurant operations by assisting on the floor, including clearing tables, running food and drinks, and other tasks as needed to ensure smooth service
