The role of Head Chef at JOEY Restaurants in San Diego is a pivotal leadership position, directly contributing to the success of a multi-million-dollar restaurant and its team. As Head Chef, you are responsible for leading your kitchen team to deliver memorable, consistent, and iconic culinary experiences that align with JOEY’s high standards. This role involves managing labor budgets, ensuring a pristine and safe restaurant environment, and maintaining the highest quality of food products. The Head Chef will oversee the preparation of ingredients and food products, ensuring they meet recipe standards and par levels, utilizing various cooking methods such as grilling, roasting, sautéing, and frying with precision and efficiency. Maintaining cleanliness and organization in all kitchen and storage areas is essential, alongside rigorous adherence to food safety and handling regulations. Additionally, the Head Chef supports recruitment efforts, selects and retains a talented kitchen team, and encourages development through training programs aimed at enhancing technical knowledge and execution of JOEY’s culinary standards.

Day-to-day responsibilities also include managing in-store budgets, food costs, and labor to optimize restaurant performance, and actively contributing to the delivery of JOEY’s signature hospitality. Job Requirements

  • High school diploma or equivalent
  • Valid Food Handler certification or ability to obtain
  • 3+ years culinary experience preferred

  • Must have or be able to obtain valid local and/or state Food Handler certifications

Job Duties

  • Support your team in the preparation of all ingredients and food products to fulfill prep lists, par levels, and recipe standards
  • Utilize various preparation and cooking methods to ensure the quick, precise creation of menu items in accordance with JOEY recipes
  • Maintain prep and cooking areas in a clean, sanitary and safe manner
  • Ensure clean, organized, and maintained refrigerators, cooler drawers, ovens, preparation, and dry storage areas
  • Train partners on the instructions and guidelines for safe usage of kitchen equipment and cleaning compounds
  • Fulfill recruitment needs, impact positive candidate experiences, and select and retain your team
  • Support your team in training and development of technical knowledge and world-class execution of JOEY tasks and standards
  • Communicate daily focus and feedback to partners
  • Manage in-store budgets, food costs, and labor
  • Impact the delivery of Iconic Hospitality and coach the kitchen team as needed to fulfill experience standards
  • Follow all food service and handling safety precautions and procedures
