The role of Head Chef at Eataly is integral to maintaining the brand's high culinary standards and ensuring an exceptional guest experience. Reporting directly to the Store Director and functionally to the Area Executive Chef, the Head Chef oversees the entire Back of House team within the store. This leadership position involves directing daily culinary operations, managing employee hiring, training, payroll, scheduling, and evaluations, and fostering a positive and productive work environment. The Head Chef collaborates closely with the Area Executive Chef and store team to plan and execute seasonal menus that reflect Eataly's dedication to authentic Italian cuisine. This role requires a blend of financial acumen and operational expertise to manage food production, inventory, procurement, and quality control, while ensuring compliance with safety and sanitation standards. The Head Chef is also responsible for interdepartmental collaboration to support store initiatives, special events, and communication of menu changes to front-of-house personnel. Job Requirements
- Availability to work onsite with a flexible schedule including evenings, weekends and holidays
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, standing or walking in a restaurant environment
- Ability to operate commercial equipment including stand mixers, ovens, torches, etc.
Job Qualifications
- 6+ years of chef experience, including 3+ years of management experience
- Strong understanding of Italian cuisine
- Excellent communication, leadership, motivational and team-building skills
- Knowledge of kitchen equipment and procedures, safety and sanitation regulations
- Advanced computer skills
- Bachelor's degree or degree from a post-secondary culinary arts training program highly preferred
Job Duties
- Direct employee hiring, assignment, training, payroll, scheduling, evaluations and terminations
- Collaborate closely with the Area Executive Chef and store team to plan and execute seasonal menus
- Partner with store senior leadership and corporate to execute initiatives, plan special events and share information
- Ensure Back of House team updates virtual menus to manage margin differences
- Combine financial acumen and operational detail attention, creating an environment emphasizing excellence
- Observe food production and sample food to ensure compliance with recipes and standards
- Review financial information such as sales costs and labor to ensure efficient operations
- Manage inventory and procurement including estimating needs, placing orders, and checking deliveries
- Inform front of house personnel of menu changes, specials and shortages
- Document, investigate, escalate and resolve all employee and guest incidents
- Perform other duties as required or assigned
