The Executive Chef role is a pivotal position within Disney Cruise Line's culinary operations, responsible for leading the galley team and managing culinary services across multiple food outlets onboard the ship. This role involves overseeing food preparation to meet dietary requirements and allergies, maintaining exemplary food quality and safety standards, and ensuring compliance with Disney and U.S. Public Health guidelines. The Executive Chef works closely with the shoreside Food & Beverage management team to coordinate menus and culinary offerings, including group dining and special events.

In addition to culinary oversight, the Executive Chef manages inventory control, cost management, waste reduction, and kitchen equipment maintenance. They are responsible for the preparation and updating of Operating Guidelines and training materials, conducting department meetings, and facilitating the continuous development of their team members. Leadership duties include personnel management such as performance evaluations, contract renewals, and onboarding new hires, along with fostering a positive and productive work environment.

This shipboard role demands a professional with substantial experience in high-volume food and beverage operations, preferably with certification as an Executive Chef or equivalent. Candidates must demonstrate strong communication skills, technical expertise in ship-based culinary operations, and the ability to work in a fast-paced, guest-focused setting. The position requires living and working onboard the ship for extended periods, with flexibility in scheduling and job functions. Job Requirements

  • Minimum of five years of experience in high-volume galley or food and beverage operations

Job Qualifications

  • Certification as an Executive Chef or equivalent in Culinary Arts
  • strong knowledge of food and beverage products and services

  • fluency in English - reading, writing, and speaking
  • preferred college education or substantial equivalent industry experience
  • previous ship experience is a plus

Job Duties

  • Lead the galley team and oversee all culinary operations across various food outlets
  • coordinate all food offerings, including group menu selections and special dietary requests
  • ensure the proper preparation of meals accommodating special diets and allergies for guests and crew
  • monitor culinary standards, manage inventory, and implement cost control measures
  • conduct food and menu audits to maintain quality and consistency
  • develop and maintain a strong partnership with the shoreside Food & Beverage management team
  • ensure compliance with Disney Cruise Line and U.S. Public Health sanitation requirements in all kitchen areas and food storage
