The Head Chef - Airline Catering Production role is a pivotal position based on-site in Jamaica, USA, offering an annual salary range from $94,000 to $110,000. This role works closely with the Executive Chef in the Customer Service Center (CSC) to ensure flawless daily food production that aligns with company standards, menu specifications, and customers’ expectations. The successful candidate will act as the Executive Chef’s indispensable right hand, stepping into the leadership position whenever necessary to maintain smooth kitchen operations and uphold consistently high standards.

This position requires a hands-on leader who excels at collaborating with kitchen staff, managing inventory, controlling costs, and maintaining exemplary hygiene and safety standards, including adherence to HACCP regulations. The Head Chef plays a crucial role in supporting and developing kitchen teams through staff training, menu development, and operational leadership, while also actively participating in marketing efforts and continuously incorporating industry innovations and emerging trends into food offerings. With responsibilities that extend to overseeing quality assurance, employee motivation and development, cost control, and the implementation of company values, this role is essential for upholding LSG Sky Chefs’ reputation for excellence in airline catering.

The ideal candidate will have significant commercial cooking experience, professional culinary training, and strong organizational and communication skills. Job Requirements

  • Five years of experience in commercial cooking
  • Apprenticeship or graduation from an accredited culinary school
  • Knowledge of food and hygiene regulations such as HACCP
  • Good communication and organizational skills
  • Service orientation
  • Proficient in Microsoft Office and Windows-based computer applications

Job Qualifications

  • Five years of experience in commercial cooking
  • Apprenticeship or graduation from an accredited culinary school
  • Additional certifications such as diet chef, industrial chef, design chef or equivalent professional experience preferred
  • Certification with the American Culinary Federation is a plus
  • Knowledge of food and hygiene regulations including HACCP
  • Good communication and organizational skills
  • Service orientation
  • Proficient in Microsoft Office and Windows-based computer applications

Job Duties

  • Support all food production activities in hot and cold kitchen in responsible CSC including inventory and production deviation identification and countermeasures
  • Support controls and adjustment of production plans including food and equipment consumption estimates
  • Ensure compliance of recipe specifications and conduct sense-checks (gold standards)
  • Participate in food product and menu development as needed
  • Maintain and update catering manuals within responsible CSC
  • Support cost controlling including budget, personnel, and material costs
  • Participate in menu presentations both internal and external
  • Coordinate and control countermeasures in production in case of customer complaints
  • Develop and support training strategies and plans for kitchen staff
  • Represent kitchen and kitchen staff to external stakeholders
  • Research and incorporate industry innovations and emerging food trends
  • Participate in marketing activities
  • Ensure quality of goods received
  • Maintain tidiness in food storage and enforce first-in-first-out principle
  • Guarantee adherence to hygiene, health, safety, and HACCP standards
  • Organize, staff, and direct area of responsibility
  • Guide, motivate, and develop subordinate employees
  • Implement company values and management principles within the department
  • Control cost budget and initiate corrective actions as needed
  • Participate in company initiatives such as global quality standard, HACCP, and lean manufacturing
